This week, chef David Guas of Bayou Bakery brings you his version of the classic pressed Cuban sandwich. Though a process, the braised pork is the jewel in the crown of this sandwich and, trust us, your hard work will pay off! You may not think this Louisiana born and bred chef would know how to make a killer Cuban sandwich, but the dude knows his Cuban cuisine. First he makes a wet rub with the ingredients of classic Caribbean cuisine -- oregano, garlic and other seasoning -- which can be adapted to chicken as well. After marinating it overnight, he roasts it, lets it sit and then carves it in perfect tender slices to stuff in the sandwich alongside mustard, ham, Swiss cheese and dill pickles.
