I’m not quite back into Tasty Tuesday mode again, but I’ve recently discovered The Bootstrap Cook, and I’ve been trying some of her recipes. And this week, it’s going to be this one. So I thought, why not make it on a Tuesday? So, here we go. See y’all Tuesday!
#TastySaturday: My Mushroom, Lentil & Ale Pie
I’ve been sick with a cold, and after spending most of the day in bed, I really felt like something tasty for dinner. Warm, nourishing, healthy and non-soupy. In short, I wanted pie. But, I wasn’t going to spend hours in the kitchen. See the problem here?
Well, it was no problem with this recipe from the Bootstrap Cook. It was easy, especially since I used ready-made pastry.
And, boy, damn, was it good! Perfect autumn food.
#TT Tasty Thursday: Avocado, Tomato and Mango Salsa
Today is Thursday, yes. And I haven’t done a Tasty Tuesday in a while. But I was looking for something fun to do with a mango from my weekly organic fruit & veg box. Then someone recommended a salsa. So I found this recipe. And I thought I might as well share it with you if anyone is still reading.
And it was delicious! We had it with some rice and beans, and there are plenty of leftovers.
Does everybody know the cheap-ass curry option?
Gluten-free, vegan, flexible, can be low spoons.
You just need rice, sauce and stuff.
Rice: fix your favorite rice. For lowest spoons, get ready-made plain rice, instant rice or use a rice cooker.
Sauce includes:
Canned coconut milk
Canned diced tomatoes
Curry powder
Any other curry-related spices you have, to taste, including: garlic powder, onion powder, cumin, ginger, cayenne, cinnamon, nutmeg, cloves, etc.
Stuff can include:
Canned chickpeas
Canned red beans
Canned black-eyed peas
Ready-made black-eyed peas
Ready-made lentils
Frozen onions
Frozen green beans
Frozen peas
Canned potatoes
Fresh spinach
(Trader Joe’s often has the ready-made stuff in the fridge or freezer section.)
While the rice cooks or heats up, combine all the rest in a pot and simmer. (If you add fresh spinach, do it towards the end and just let it wilt until its dark green.) Make the volume as big as you want for leftovers.
Thought I'd share this for those days you really don't feel like cooking but still want a decent dinner.
#TT Tasty Tuesday - on a Monday: The Husband’s Been Baking...
...and he made a delicious peach cake. This is his second attempt, the first time he followed the recipe and used apricots. But now that we’re out of fresh apricots, tinned peaches worked also very well.
I’m more of a cook than a baker, so the husband found his niche now. He’s taking over the baking in our house. Mostly, it’s bread (challah on a Friday, for example), but last week, he decided to branch out when we had a really lovely load of apricots in our weekly organic fruit & veg box.
The recipe is foolproof and works nicely with fruit other than apricots. We’ll try apples next.
# TT Tasty Tuesday: My Mushroom-Nut Burger
Boy, oh boy, this is a good burger! And, different from other burgers I’ve made before, this wasn’t even messy to make. It takes a good long time in the oven (about 45 minutes in total), but you can use that time to read or play with your dogs in the garden.
I added some rocket leaves, gherkins and a slice of Violife smoked cheeze to the burgers, and we had them with sweet potato fries and a (not very good) blueberry almond milkshake. I got four good-sized burgers out of it, so we’ll be having the same again tomorrow. 😀
(PSA: I will be pausing Tasty Tuesday for a while as I’m running out of ideas. I might post the odd new recipe I’ll try, but it won’t be a regular thing anymore. Maybe it’ll end up being a sabbatical only, but I don’t want to make any promises I’m not able to keep.)
#TT Tasty Tuesday suggestion: Mushroom-Nut Burgers
This will probably be the last Tasty Tuesday for a while - I’m lacking inspiration. But before I leave you, I’d like to make some burgers with you. I’m in the mood for burgers. Must be the good weather.
These seem simple enough, and the ingredients aren’t too exotic either. Happy cooking and eating!
#TT Tasty Tuesday: My Vegan Cheesy Rice
Oh, this was good. And so simple. You just have to remember to soak the rice an hour before you intend to start cooking (which I nearly forgot). And the rest is easy peasy.
My rice didn’t turn out as creamy as the picture that came with the recipe, but it was very tasty. A definite keeper.
#TT Tasty Tuesday suggestion: Vegan Cheesy Rice
I had considered pausing Tasty Tuesday for a while because I’m out of ideas, and sometimes I feel I’ve tried almost everything for Tasty Tuesday. I just thought I’d have one more look at a list of recipes I saved ages ago. Ages, as in, before I ever switched to a vegan diet. And so I found this recipe on that list. It looks like risotto without all the work. I love risotto, by the way, and often enjoy making it. But some days, I would love to have the comfort it brings without putting much effort into its preparation. Anyway, this looks like a staple for anyone’s kitchen, so I’ll give it a try on Tuesday. I haven’t decided yet what I’ll make with it, we’ll have to just wait and see.

#TT Tasty Tuesday: My Saucy Moroccan Spiced Lentils
Oh boy oh boy oh boy! This was SO good. Quite easy to make too. But there was a mountain of washing up to do afterwards. Which I didn’t mind because I’m not the one who had to deal with it. :D
But seriously, this is a great recipe. I made some paprika fried potatoes and arugula with it which turned out to be a great combination. We also have leftovers for lunch tomorrow. Happy days!
#TT Tasty Tuesday suggestion: Moroccan Spiced Lentils
I love lentils. Mostly I use them in soups, stews or in dhals. But I’m looking to branch out. And this Moroccan spiced side dish looks extremely good. I think it would go nicely with couscous or rice. Or flatbread and a salad. We’ll see what I feel like come Tuesday.

This was quick, easy and tasty. Probably not the healthiest as I used a store-bought sauce, but there was plenty of delicious veg in there. And it tasted great. No leftovers! :D
#TT Tasty Tuesday suggestion: Spicy Mushroom & Broccoli Noodles
I love a quick noodle dish. In fact, it’s one of my favourite foods. I’ll even go so far as to eat Pot Noodles every now and then. Trying to follow a vegan diet makes this a little hard because many of the pot noodle type packages have egg or fish added in one form or another.
But, I have found a variety of plain, quick wok noodles which don’t contain egg or dairy, and I now always have a packet at home. I’ll use them instead of the egg noodles in this recipe. The added advantage: my noodles don’t need any prep at all.
And yes, this borders on fast food. But just think how many goodies it contains. Broccoli! Mushrooms! Cashew nuts! Garlic! That’ll balance out the fact that we’re using a shop-bought sauce and wok noodles. Promise.
#TT Tasty Tuesday: My Roast Veg and Chickpea Stew
This is a great recipe. Easy to make and very tasty. We have leftovers for tomorrow, and I plan to mix them with some pasta. Roasting the veg brings out their natural sweetness which is what makes this so much better than a simple tomato sauce with veg thrown in. I added a little smoked paprika to round things off, and it was a good move. A definite keeper!

I’m always on the lookout for easy, tasty recipes which (might) leave leftovers to take to work - or just eat the following day. Yes, I’m a lazy cook.
So this recipe from Deliciously Ella caught my eye. Not only is it easy enough to make, but it also looks great. And it should make some tasty leftovers.

#TT Tasty Tuesday: My Vegan Salted Chocolate Chip Cookies
Oh boy, oh boy, oh boy. These are SO good. And easy to make. I couldn’t get vegan dark chocolate chips, so I just bought a bar of good, dark chocolate and chopped it in the food processor. I prepped the dough last night, so it sat in the fridge for about 15 hours (12-24 recommended). I made exactly 18 little mounds out of the dough this morning, put them in the freezer for 10-14 minutes and then baked them. The only ‘quibble’ I have is that they didn’t flatten out at all for me. They basically retained their ‘mound’ shape. Next time I’ll either skip the freezer step or flatten them slightly before they go into the oven.
But whatever their shape, they are the best damn cookies I’ve ever made.
