The sotol plant isn't an agave and can resist low temperatures, this Mexican spirit (sotol) have the denomination of origin on Chihuahua and Durango. Yes some places in Mexico get snow particularly in the north at winter.

So here you see Piña this magnificent fruit, rich in fructose, nutrition, beautiful. If you put attention it has a resemblance of an agave plant, in fact when the agave is been razed, the core look a like to a Piña, so in occasions you'll hear people referring to an agave core as Piña.
