Some of my recent meals from this past week ☝️Here’s what I made:
LOADED COBB SALAD
2 cups lettuce
1/4 cup blue cheese
2 Tbsp blue cheese
1/4 cup bacon bits
3 oz rotisserie chicken
1 hard boiled egg
Salt & pepper to taste
(1.5 servings shown)
BLACK EYED PEAS LETTUCE WRAPS
4 Lettuce leaves
1/2 avocado
1/2 cup black eyed peas
1/2 cup shredded cabbage
1/4 cup peanuts
2 Tbsp peanut sauce
Salt & pepper to taste
SPRING ORZO SALAD
1/2 cup cooked orzo
1 stir fried zucchini, sliced (stir fry with an oil spray)
4 cups greens
1/3 cup feta
1 Tbsp oil
1 Tbsp red wine vinegar
Salt & pepper to taste
New recipe! Chickpea salad-stuffed avos 🥑 SUPER easy - less than 15 mins to make 🤩 Here’s the recipe 👇
INGREDIENTS
* 1 avocado
* 1 tsp olive oil
* 1 tsp pesto
* 1/2 cup chickpeas (I’m using canned)
* ¼ red onion
* Red pepper flakes, salt, basil
INSTRUCTIONS
1. Dice red onion
2. Mix oil, pesto, chickpeas, red onion & seasonings to make the chickpeas salad
3. Slice avocado in half, remove the pit, and fill with the chickpea salad
4. THE END!

You can also chop up the avocado & add it to the chickpea salad if that’s easier to eat (last picture) - and you can also add the salad on top of 2 cups of greens to complete.
