Day 2- breakfast was the same as yesterday, and I accidentally skipped lunch, but I made up for it with a strawberry and banana smoothie. Tonight for dinner was turkey meatloaf and baked, smashed red potatoes. I could eat smashed potatoes for the rest of forever
dinner tonight is jerk chicken with Caribbean wild rice and strawberry and pineapple salsa. (currently craving chocolate...and it's only day one)
s/o to cousin Emily for being the resident chef. I don't have easy access to a grill, nor did I have a grilling pan, so Emily hooked me up with an easy way to still make great chicken without frying it. I took 3 servings of lean chicken breast and marinated them in low calorie (15 per serving !!! ) Italian dressing for thirty minutes. Mean whole I preheated the oven to 375 degrees and cut up about half of a Vidalia onion. I coated the bottom of a baking dish with just a little bit of Olive oil, which is optional because the dressing has oil in it as well, and laid down the onions. I then put down the marinated chicken drizzled some of the marinade on top. I popped in into the oven for ten minutes, then flipped the chicken. After 5 more I turned on the broiler. About 3-6 minutes on each side, and you'll end up with lovely charred chicken that tastes like a million bucks! I chopped up a serving and ate it on my salad! I'm saving the onions for dinner tonight!
day one- lunch was spinach salad with bell peppers, carrots, celery, craisins, fat free Honey Dijon dressing and chicken marinated in low calorie Italian dressing and baked/broiled with about half a onion (the chicken was kinda really awesome)
