It’s not an MRI scan. MRI’s aren’t true colour.

This is from the “Visible human Project” where they took a male and female cadaver and ground them away in 1 and 0.33mm passes respectively, took a picture at each pass and composited them into high-resolution image sets. Those images can be output in sequence to produce this animation.

Since this is the male, you’re looking at the body of 38 year-old Texan murderer  Joseph Paul Jernigan being abraded away in 1mm slices.
