Recipesš¤š¤š¤ healing detox veggie soup
I have the Instant Pot so I just poured:
half a quart of bone broth
Baggie of shaved Brussels sprouts (about 3 cups)
Half a chopped yellow onion
2 cloves of roasted garlic
Few shakes of cayenne powder
Few shakes of curry powder
1 can of black eyed peas (with the water)
Manual high pressure cook for 15 mns
The veggies were really thick, but when they cook some of the water comes out so it gets more soupy after it cooks. It makes tons of servings so make sure thereās space in your fridge to keep it! Itās really filling with all the high fiber veggies but everything is nice and soft and I personally like spicy but if you donāt, make sure youāre really careful with the cayenne or leave it out altogether.
Turmeric is anti inflammatory, bone broth contains collagens, and the cayenne/ginger is fat burning. Cruciferous veggies and garlic & onions fight cancer. Black eyed peas are a low fat source of protein and more fiber. You can also use white beans or another kind of legume.
The veggies and spices can be adjusted based on your preferences. For example, I love shredded cabbage or bok choy but my Whole Foods was out of coleslaw mix, so I used Brussels sprouts because itās also a cruciferous veggie, and strong enough to hold up in the cooked soup just like cabbage. I also like daikon radish in soup, but they didnāt have good radishes this week either so I skipped it. There is so much fiber in this soup that I canāt even eat much of it, and itās not calorie dense at all so itās amazing that itās so filling.
You can use tomatoes and bell peppers too if you donāt mind eating nightshades, and mushrooms if you eat fungus. If you want meat, you can add shredded chicken breast. If you donāt like curry flavors, you can use Italian seasoning or something else like thyme and rosemary. (It doesnāt taste like curry though, the ginger gives it a fresh flavor and the cayenne adds heat.)
Salad š„ is great but sometimes I just want something warm and comforting to fill up my tummy š²
