This Single Serve Egg and Chickpea Breakfast is a quick and nutritious way to start your day. It's packed with protein, fiber, and flavor, making it a perfect breakfast option for one.
Ingredients: 1/2 cup canned chickpeas, drained and rinsed. 1 large egg. 1/4 cup diced tomatoes. 1/4 cup diced red bell pepper. 1/4 cup diced onion. 1/4 teaspoon cumin powder. 1/4 teaspoon paprika. Salt and pepper to taste. 1 tablespoon olive oil. Fresh parsley for garnish.
Instructions: In a small skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, and saut until they start to soften, about 2-3 minutes. Stir in the chickpeas, diced tomatoes, cumin powder, paprika, salt, and pepper. Cook for another 2-3 minutes, or until the chickpeas are heated through. Create a well in the center of the skillet and crack the egg into it. Season the egg with a pinch of salt and pepper. Cover the skillet with a lid and cook for about 4-5 minutes, or until the egg whites are set, but the yolk is still runny. Garnish with fresh parsley and serve hot.
