Fried Salmon in Sinigang sa Miso Store bought Miso paste, sinigang mix (or sampaloc), Salmon head, Tomatoes, Kangkong Procedure: Fry salmon head separately (add a little seasoning before frying) Saute onions, ginger and garlic, then add the Miso paste Add the tomatoes, stir fry for a few minutes or until the miso paste is a little brownish Add water, let it boil, then add the sinigang mix Put the kangkong and fried salmon. Sinampalukang Gulay Ilokano version of Sinigang but instead of meat as the star of the dish, veggies dominates it. Ingredients: Sitaw, Sampaloc, Gabi, Sigarilyas, Bunga ng Singkamas, Kangkong, Shrimp Procedure: Stir fry the shrimp first and set aside. Using the same pot, saute garlic & onion. You may add ginger but that is optional. I don't usually use it for pinoy dishes like this because the fam don't like it. Add the 1-2 tsp boneless bagoong (adjust it depending on your taste preference), simmer for a minute. Add the gabi, stir fry for 3-5 minutes then add sitaw and bunga ng singkamas. Cook for a minute and then add sigarilyas and shrimp. Get a stainless strainer, put the crushed sampaloc in it and wait for it to simmer. Wait for the veggies to be cooked and then add the kangkong. Adjust the taste with salt and pepper or you may add a shrimp bullion. If you don't have real sampaloc, tamarind powder is okay. You can also use pork instead of shrimp. Ginataang Alimango Alimango, Kalabasa, Petchay, String Beans Procedure: Cook Alimango first by stir frying it in oil. Set aside. Using the same pot, saute onions, ginger and garlic (you may omit ginger if you don't like it). Add kalabasa and sitaw, stir fry it for a few minutes. Then add the coconut milk. Let it simmer for a few minutes or until the oil from the coconut milk comes out. Continue to simmer until the veggies are tender. Adjust the taste with salt and pepper. Add the alimango and petchay. Simmer for a minute and then serve. Use as little oil as possible since the alimango and coconut milk are high in cholesterol. The veggies are also best eaten half cooked. I saw an article a few days ago about practices we should adopt after ECQ and predictions of what may trend due to our experiences during this quarantine. I tried finding it to link to this post but I can’t remember what app I used when I saw the article. This led me to asking, will we ever go back to normal? In most countries, maybe not. In the Philippines? It depends.
