Savor the revitalizing flavors of a jelly-formed strawberry mojito. You can use this homemade strawberry mojito jelly as a glaze, spread on toast, or give it as a gift to loved ones.
Ingredients: 4 cups fresh strawberries, hulled and chopped. 2 cups granulated sugar. 1/4 cup fresh lime juice. 2 tablespoons fresh mint leaves, chopped. 1 packet 1.75 oz powdered fruit pectin. 1/4 cup white rum optional. Green food coloring optional.
Instructions: Place the chopped strawberries and powdered sugar in a big bowl. Give them time to macerate, about half an hour. Process the macerated strawberries in a food processor or blender until smooth. After transferring the pureed strawberries to a large saucepan, mix in the powdered fruit pectin, chopped mint leaves, and fresh lime juice. If desired, add a few drops of green food coloring for a vivid color and white rum for a taste of a mojito. Over medium-high heat, bring the mixture to a boil while stirring continuously. After the mixture thickens, boil it for one to two minutes. Skim off any foam that appears on the surface of the saucepan after removing it from the heat. Leaving about 1/4 inch of headspace, ladle the hot jelly into sterilized jars. After cleaning the jar rims, put on lids and rings to seal. To make sure the jars are properly sealed, process them for ten minutes in a water bath canner. After taking the jars out of the canner, allow them to reach room temperature. Press down on the center of each lid to make sure it has sealed properly; it shouldn't flex. After the jars have cooled and sealed, mark the date on the label and store them for up to a year in a cool, dark place.
