Instructions: Preheat your oven to 375F 190C. Cut the top off the garlic bulb to expose the cloves, drizzle it with a bit of olive oil, and wrap it in aluminum foil. Roast the garlic in the preheated oven for about 30-40 minutes, or until the cloves are soft and golden brown. Remove from the oven and let it cool. In a food processor, combine the cooked chickpeas, roasted garlic cloves, fresh rosemary leaves, lemon juice, and olive oil. Blend the mixture until smooth and creamy. If needed, add a little water to achieve your desired consistency. Season the hummus with salt and pepper to taste, and blend again briefly to combine.
