Having a great time in London. I’ve been walking around, shopping, taking a few photos, writing. I just booked the first part of my trip this summer and I’m so excited. I’ll be going wonderful places with great friends and hopefully I’ll get some research done for my book while doing so. Summertime screams pasta salad. I made this one on a whim and it was so good! It had vegan gluten free pasta, tomatoes, sun dried tomatoes, fresh basil, vegan cheese, red onion, lime juice, pepper, salt and roasted pine nuts. I made @ellenfisher and @fullyrawkristina inspired carrot ice cream cake for my birthday! Not everyone liked it but I expected that. People are so used to super sweet, sugared, dairy-filled food so it’s very different. I thought it was delicious, though. I’ll definitely make it again! Today my family is coming over for my birthday. So I made some delicious treats for everyone. These little pastries are something my mom and I came up with. It’s a mix between pasteis de nata and crunchy fruit pastries we used to get when I was younger. I topped most with strawberries and some with blueberries. They look and smell amazing!!! Today is my birthday. I’m going out to dinner with uni friends and this Saturday I’m going out with some other friends. Sunday I’m celebrating with my family. It’s strange. I’ve never really had a particular connection with celebrating my birthday but I feel so grateful that I get to spend time with so many great friends. • These asparagus are from a couple of days ago and they were AWESOME.
