So is the point to Dark Souls to become artificially skilled at combat by becoming accustomed to attacks from beasties that almost nobody would be able to survive without prior experience of said beasty? 

When people told me this was about skill and caution I didn’t think it meant “learn how the brick wall moves by repeatedly failing at it”, I was expecting “skill and caution”. So far death is a meaningless way to learn movesets and spend time grinding enemies…
