Maggya Pole( Dosas)
Soak 1 cup Rice in the night with water.Then next morning the fruit called Magge ½ is cut into fine pieces.Use ½ coconut.Grind coconut,Rice( after thorough washings),and Magge pieces till fine paste.Add ½ spoon salt keep for 2 hrs.The fruit used—cut middle seeds and throw away and remaining part to be used.Also remove skein and throw away.After 2 hrs make round plain roll on a flat Pan using little edible oil.Cook 2-3 mins and serve with jam or moharram or liquid jaggery – the Dosas.Vow delicious.

Veg tasty Indian Pulav( of Rice)
Ingredients---Cooked Rice,vegetables—green peas,cauliflower,capsicum,carrots,onions,spices—turmeric, clove,cinnamon,black pepper; green chillies,red chilly powder,salt.
Recipe----Prepare Rice ( mainly Basamati or fine pulav rice) cook and keep aside.Then cut all the above vegetables; Take a big pan add little oil and fry only onion pieces—to this add all the cut vegetables cook,add pinch turmeric powder,powdered cinnamon and black pepper half a spoon,clove,red chilly powder,3-4 green chillies cut vertically. To this vegetables bhaji add ½ a spoon salt( based on your experience) mix the cooked Rice and stir to mix everything --- Tasty Veg PULAV ready to serve.

Bring 1/4 kg Maida flour, add pinch salt and make dough.Keep little aside( dry flour).Make small round balls. On a rolling flat Pan roll these balls into round flat Chappatis.Make 10 such Chappatis.Keep one over another.In between put ghee( toop) and make it into a big Roll.Cut it into small pieces vertically.These fry on a Pan with oil.Sprinkle sugar powder(little cardamom powder)on these. Cool slightly--- Crispy Chirotis ready.
Sabudana Kheer( Sago Dessert)
Soak Sabudana in water till fully wet+little more for 3 hours.---- OR also can soak in night and morning make the dish.Then in a Utensil put water and stir continuously for 20 mins and add a cup of milk and stir.See that the contents don’t stick to the bottom of the Utensil.Add 9 spoons of sugar for 200 gms Sabudana. Add cashew nuts and dry grapes . Cool and Serve.

Ingredients ---1/2 kg chana dal (chickpeas),1/2 kg rice,1/2 coconut,1/2 kg jaggery,cardamom, almonds, cashew nuts, dry grapes.
Method---Soak chana dal in water for 2 hrs,Rice for 2 hrs separately.After 2 hrs grind coconut+Rice in Mixer.Then remove in a Big Pan.Add this,add jaggery and Chana Dal .Keep on gas with continuous stirring for 20-15 mins.Add water if necessary,see that the contents don’t stick at the bottom of the Pan.Add in the last cardamom little,few nuts(cashew,almonds,dry grapes).
Cool --- Payasam ready -----

Ingredients –Udad dal,Rice,Potato,onions,green chillies,turmeric- a pinch,salt,oil.
In the night soak 1 cup Udad dal and 2 cups rice( thick one). Next morning wash this thoroughly 3 times and grind in the mixer.Put ¼ spoon salt mix and keep this aside for 2 hrs.
In the meanwhile make bhaji—Cut potatoes and onions fine small pieces.In the frying pan add ½ spoon edible oil put onion pieces fry,then add potato pieces to cook soft by adding little water.Add 2-3 green chillies+ pinch turmeric powder and pinch salt+pinch Patanjali masala powder.Mix thoroughly --- Ready.
Then take Dosa paste on Tawa flat Pan—lay out on this to make round flat Dosas with little oil – Cook ---- Ready.
Masala Dosas ready to serve with Bhaji..

Pooranpolis( Sweet dish)
Ingredients—1/2 kg chana dal( chickpeas),1/2 kg jaggery,1/2 kg Maida,turmeric powder ¼ spoon,elaichi( cardamom)4-5 grains,small piece dried ginger.
Recipe---Soak chana dal for 1 hour----then steam in cooker 4 Simultaneously separately keep 1 small cup of maida flour aside,remaining prepare dough by adding little salt ¼ spoon,1/4 spoon turmeric powder.Soak in edible oil just to dip.Then take the boiled chana dal,drain all the water( this water can be used to make Saar for eating with rice).Add to this small piece of dried ginger,4-5 grains of cardamom and add jaggery. This take in a pan and stir till all jaggery gets properly mixed(about 10 to 15 minutes). This mixture cool and grind sufficiently( don’t add water).Then make round balls ( 40 can be made).Keep aside.
Of the maida dough make small small balls—flatten on the hand and keep the chana dal balls on this and enclose it each separately.Then by sprinkling maida flour roll on a flat rolling Pin until the balls resemble thin round pancakes.Keep a plastic paper on flat rolling pin while rolling.Then dry bake on a flat Pan with medium Gas--- burner.In this manner bake all the pancakes( of rolled balls).They resemble sweet Chappatis.This is called Pooranpoli—put ghee on this and eat---- tasty.

TAAK MIRCHIs(Skimmed milk Chillies)
Ingredients:--Skimmed milk,round special green chillies,salt,asafoetida(if you want to add not necessary).
Recipe:-Cut 1kg of chillies at the base add ¼ spoon of asafoetida( if required only)add 200 gms of salt( not fine one simple one).This do in the morning.At the same time make skimmed milk( Chachh TAAK).Then in the night add this TAAK to the chillies in a utensil.See that Taak is not too watery.Then next morning 10 to 4 pm dry on the terrace on a plastic sheet.Keep the watery Taak in the utensil aside.After 4 pm pile up the chillies and dip in the utensil.Keep overnight.Next day again similar way dry on the terrace.This should be done 4-5 days till all the Taak is absorbed by the chillies.After 5th day gather all the chillies and fill in the Plastic or steel container.
Then when you want to eat with Rice and curds—fry 1 or 2 chillies in deep pan with oil and eat with rice.

Method:-Cut cabbage into small pieces,onion into small pieces,jaggery into small pieces.Soak 1 spoon of rice,1/4 spoon of udad dal,1/4 spoon of tur dal in water for 2 hours.Then grind ½ coconut -2-3 chillies,small piece of tamarind in Mixer( not too much of paste form)alongwith soaked udad dal,tur dal and rice after draining all the water.This masala mix with cut cabbage and onion pieces and jaggery.Add less than half spoon of fine salt.Donot add water.This mixture make round balls soak in little wheat rava and fry on Tawa( the one used for frying Dosas).Cook for 5-7 mins with addition of little oil. ------------Cabbage Wadas ready-----

Method---Take 1 cup of Rice flour add pinch salt,few grains of methi powder and add water to make the dough.Then make round balls and with little oil flatten on plastic paper in round shape.Fry in pan.

Ingredients ---Colostrum milk1/2 litre,normal milk1/2 litre,1/2 tender coconut,500 gms jaggery,elaichi.
Method---Mix both the milks in a utensil.Grind tender coconut till paste with jaggery.Then mix all and add elaichi4-5 grains and keep for steaming till 45 minutes.Cool,cut into pieces and keep in fridge---Lovely dish ready—
Benefits---Colostrum milk is 1st milk produced after a cow has delivered a calf.This milk is lower in fat and higher in protein than regular milk( colour yellowish).It also contains antibodies to protect against diseases.This dish is a natural source of proteins for vegetarians,good bone health,smooth skin,strong immune system, prevention of illnesses as hypertension,dental decay, respiratory problems,obesity, osteoporosis and even some forms of cancer.
