V E G A N VANILLA PISTACHIO CUPCAKES W/ NUTTY VANILLA BUTTERCREAM (cupcake recipe adapted from Chef Chloe’s vegan fluffy coconut cupcakes//modified almond butter cream frosting from ohsheglows.com) ingredients! FOR CUPCAKES: 1 ¾ cups all-purpose flour 1 cup sugar 1 teaspoon baking powder 1 teaspoon baking soda ½ teaspoon salt 1 cup almond milk ½ cup canola oil 2 tablespoons vanilla extract 1 tablespoon white or apple cider vinegar 1 cup finely chopped, shelled pistachios (you can just eyeball it; use less or more, depending on your own taste.) how to: Preheat the oven to 350 degrees F. Line 2 (12-cup) cupcake pans with 14 cupcake liners.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together almond milk, oil, vanilla, and vinegar. Pour the wet mixture into the dry mixture and whisk until just combined. Do not over mix. Add chopped pistachios, gently folding into batter with a spatula. Fill the cupcake liners about two-thirds full with batter. Bake for 15 to 18 minutes, or until a toothpick inserted in the center of the cupcake comes out clean with a few crumbs clinging to it. Cool the cupcakes completely before frosting.
While they cool, you can get started on your butter cream frosting (follow recipe below). When the cupcakes are ready, ice the fluffy tops with frosting and sprinkle with some roughly chopped pistachios for a magic touch of color and saltiness. Finally, nom away. *I found that because these cupcakes are SO VERY moist, they were even better the next couple days! Feel free to enjoy these cakes for at least 48 hours.
ingredients! FOR BUTTERCREAM: 1/2 cup Earth Balance buttery stick or equivalent, room temperature 3 cups powdered sugar, sifted 1/2 tsp kosher salt 1 tsp pure almond or pistachio extract 1 tsp pure vanilla extract 1.5-2 tbsp almond milk, to achieve your desired consistency how to: In a mixing bowl, beat 1/2 cup of Earth Balance (or equivalent) with an electric mixer. Add in the milk, extract, and salt. Mix. Now gradually add in the sifted powdered sugar, starting with 1 cup and mixing slowly until fully combined. Continue mixing until you have fluffy, delicious butter cream frosting. I added a bit of all natural food coloring to mine, but this is optional, of course. *If you use natural food coloring, be aware that high quantities can change the taste of the buttercream. Incorporate modest amounts of coloring, tasting as you reach the desired color. This way you do not end up with crappy, gross frosting.
