Ron Cobb’s concept art for what became the Hammerhead in the Mos Eisley cantina, later named Momaw Nadon the Ithorian.  This character appeared on screen briefly but memorably, unlike Cobb’s unused design for a walking plant person, which only became better known when West End Games got access to Lucas Films files of concept art and created the Expanded Universe.  Grenadier made a Hammerhead miniature for WEG’s D6 Star Wars RPG and Miniatures Battles games, originally from their 1988 A New Hope box set:
