Chocolate tempering week was last week and we made chocolate cigarettes. I also finished early and was asked to help the head chefs prepare hollow chocolate eggs filled with truffles for the president and founder of the university.

The tarts made I think two weeks ago, except for the normande tart bc I forgot it existed.

Baguettes! We made these by hand and the first two are mine. We made three but they got put out of order.

A lattice, twist, and 12 roses made out of dead dough. Dead dough means there’s no leavening, which makes this unsuitable for eating so it mostly just is used for showpieces and decoration and the like.

I know this blog has been essentially defunct but I’m now going to culinary school so expect a lot more activity! On that note:

These are fermented pickles. They aren’t shelf pickles so you don’t even need to use a stove and they’ll be done within a week, but they’ll last at most six months. If anyone wants the recipe lmk but this is my first test and once I’ve ironed out everything I’ll probably make a proper post about it.

Any thoughts on how to not sob like a child while cutting onions?

Yes actually! So the reason we cry when cutting onions is bc you’re cutting cells and when that happens you tear into them and they release acid that hurts our eyes.

Have a sharp knife! One of the biggest factors in how much acid an onion will release is the sharpness of the knife! A dull blade causes more trauma to the flesh which means more acid.

Wet your knife! This helps the blade slide through the onion and some other science shit. The way I think of it is it like keeps the acid in the water not the air. Idk but it makes a difference!

Chew mint gum! Idk why this works tbh but it does.

Turn on the vent fan! Gets the acid out of the air!

AaaaaahhhHHHHHH

Sooo my insurance refused to cover two of my pills because apparently two pills of the same med is UNACCEPTABLE. So I can’t pay for them. And I had to pay for my sertraline out of pocket and am running dangerously low. If I don’t have my Zoloft I have a problem with my depth perception (dm for details if that doesn’t make sense) and my mind shuts off. I can’t sleep because I don’t have my sleeping meds so please help. I need roughly $120 to get both meds because my insurance requires a three month supply for my Zoloft and I’m on the highest dose...

Please help. I need my meds to function and I’m about to fail out of school and I’m a senior. Please I really need help. I’ll revise your papers (write a paper for you tbh depending on the subject since my major is writing) edit photos, take pics for kin moodboards, anything. I just really really need my meds. Please please help and DM if you want some sort of aforementioned commission...

THINGS ARE WORSE

Card is maxed, I haven’t been taking my anxiety meds because I’m not sure when I’ll be able to get a refill, I need money for a car, but need a car for work, and no one is hiring. I have school to worry about as well and I swear I’m in shambles over money every day because I can’t get the cheapest food because it’s all gone and how can I make ends meet
