Chock-full of veggies, chicken and noodles in a rich broth; this classic chicken noodle soup goes perfectly with fresh bread for Sunday dinn
This evening I decided to make this delicious. To be slightly more healthy I took out the milk and added white navy beans and tomatoes, because I like the color red when I eat. For some unknown reason food seems more festive. I also used lemon pepper and red chili flakes. For the needed milk, I used the liquid from the tomatoes, bean and water. Pasta isn’t needed with the beans but a crusty bread with butter- drools may be a must. I did add two cups of my fave gluten free pasta.
Serves 4 (2 with leftovers)

I’m more the complex music type, since I like jazz and classical, as well as Celtic and folk type music. I do listen to other types of music though.

2- Italian seasoned chicken breast
16- cherry tomatoes
1 package of Rice noodles or Rice
Butter
Lemon
Feta cheese
Olives (I used black but green would be best)
Cappers or optional (I dislike)
Random Cupboard Tomato Soup
Today’s dinner: Tomato soup. With the lack of snow accumulations (let down) we got ice for days! This in my book calls for warm and cozy = soup. I had all the tomatoes for some reason. So seach ITunes for ZZ Ward and Ella King grab your coffee (Beverage of choice) and an apron. Rock out with your spoon out!
Random Cupboard Tomato Soup
1 tablespoon of garlic
1 large yellow onion
1 red pepper (medium)
Salt (four count turn of a grinder- possible a teaspoon)
Olive oil( three count pour) I don’t always measure
Let these items sweat- yummy smelling...add all the tomatoes! Yeah! Now I also had broth for days. So I used the open one of chicken in my fridge and then I used a beef.
1 large tin of wate (16oz.)
3 dried Thai chili’s (not crushed-HOT!)
I chose to blend but this is up to you.
You can also add cream and cheese like feta or gouda.
I may serve with garlic bread or pigs in a blanket or meatballs or cheese sticks- really the pairing options are endless!

Dilemma
The test tummy and i were at costco this week and say these terribly cute ravioli in the shape of red and white hearts filled with cheese. Tell me who could have passed this up with Valentine’s Day around the corner? Now we have a tradition in our home due to my flower allergies that I’m given one or two red cabbages which i create a holiday feast including sauerkraut, smoked sausages and apples. Now these food combos will not be a happening. My dilemma is combining the cabbage, pasta and a selected meat. 🤷🏽♀️🤷🏽♀️

Beef!
Hamburgers with all the trimmings. challah bread, red onion, tomato, cheese, micro greens and mayo. Served with sweet potatoe friends and mixed vegetable which were spiced up with some parmigiana and garlic butter.
This is what is for dinner tonight. The glad rag of soup has provided again. This 20min.soup will be served with pork egg rolls and vegetable spring rolls. The test tummy likes it hot so this hot and sour soup is a bit on the hot side of things.

Mixing up a box mix
I had a taste for cake all week, really all last week because on Facebook I saw this post about chocolate cake and let me tell you it looked deliciously evil. Last week I had everything in house to create this sinfully unholy treat but this weekend failed me(I took some of the ingredients to school for classroom projects).
But what did I have in the cupboards...a boxed cake mix!
It would do...it would do.
Except the box mix called for vegetable oil (🤯it was at school!) I’m loafing around doing NOTHING! I’m not going to the store. I have internet🧐I did a search for vebtable oil substitutes and I stumbled upon using soda. I used a lemon-line soda for a lemon cake. If it were chocolate I’d have used Dr.P or C, it wasn’t and I didn’t.

New cookbook! I read these things like novels…food novels. My tummy tester wants a return trip to the bookstore for a cookbook on cookies🤦🏽♀️ diet and waistline be damned(not a priority). This new book was selected because it has traditionally English recipes with many American twist. I can’t recall the name but I’ll post a photo in my next post.

This new book was selected because it has traditionally English recipes with many American twist. It’s called “An American Girl in London”.
Blog Darwin
As things change and evolve so must this blog. With the fantastic winter that we’ve been experiencing I made a purchase in the checkout line, a magazine of soup. That’s right SOUP. This winter in my home has been all about the wonderful world of soup. Which explains the changes to the blog. It’s no longer about the round trip via the wonderful cookbook, maybe this spring/summer- warmer.
So to express my love for this glad rag of soup.
OMG
Saturday’s soup heaven was a pierogi, sausage, kale( frozen worked super), topped with bacon bits.
This soup was chopped full of all sorts of flavor: onion, garlic, carrots, stock(what you have in your pantry works), cream, celery, mushroom -optional
Its flexible and forgiving in ways of adding different veggies, stocks and even stuffed pastas.
BLT dip-lisious
1 cup of mayonnaise
1 cup of sour cream
1 pound of bacon*
1 seeded tomato, diced**
Parsley & reserved tomatoes for garnish -optional
* creators preference. (Take a guess as to how much bacon I add)
** I generally use 2-3 tomatoes b/c I enjoy the freshness to cut the fat from the bacon, mayo and sour cream.
