When the decision was made to re-stock Harpoon Brewery’s supply of Baltic Porter, they reached out to their friend and VT neighbor, WhistlePig. Every drop is aged in select WhistlePig Rye Whiskey barrels, giving this year's batch flavors of rye-like spice and soft hints of oak.

The Boss Hog Edition 六 is the first American Whiskey finished using Japanese Umeshu, the result of a true collaboration between WhistlePig and Kitaya brewery on Japan’s Kyushu island.

This well aged Straight Rye Whiskey was created using koji fermentation.  Each bottle is adorned with The Samurai Scientist – Jōkichi Takamine – who pioneered koji fermentation in the American whisky industry over a century ago.

The inspiration for the collab ski is entrenched in the early days of the sport when whiskey barrels were broken down into staves and strapped to the feet for some downhill fun in the winter. What started as an idea last year to build some stave-inspired skis for our WhistlePig team evolved into a project so successful it was too special to keep internal. The staves used for the sidewall of this year’s collab ski are from the actual barrel of The Boss Hog, Vth Edition, The Spirit Of Mauve, and the Parlor team has utilized their superior craftsmanship and attention to detail to create a high-end product that truly brings together our two brands in one beautiful package.

Announcing: The Boss Hog V, The Spirit of Mauve.

The Spirit Of Mauve, is a celebration of Mauve, one of our founding celebrity pigs. 

Mauve’s lover, Mortimer, was tragically killed defending her honor in 2014, and was memorialized in The Boss Hog, second edition, “The Spirit Of Mortimer”. Mauve heroically persevered for the sake of their son, Mortimer Jr, but sadly joined Mortimer in heaven this Valentines Day. The pain of a broken heart can prove too much for even the strongest of pigs.  

The Spirit Of Mauve is a 13 Year Straight Rye Whiskey finished in Calvados Casks in honor of Mauves undying love of apples. The result is extraordinary. A fine balance between American power and French sophistication. 

There’s nothing else like it.

Flavor Profile:

Nose: Mulled Cider with Cardamom opens up to notes of Candied Ginger and a touch of Pipe Tobacco. A lovely Caramel and Vanilla nuance develop with time in the glass, and water awakens a gentle Rye Spice.

Palate: Maple Syrup and Pears dominate, balanced by Dark Chocolate and a lasting French Oak Spice [from the finishing barrel]. With water, the spice moves front and center, and a vibrant, fruit-forward character develops with strong Citrus.

Finish: Lasting Spice and a touch of Charred Oak and Caramel, and an [unmistakable] Maple Syrup [reprise] as the finish fades.

Grilled WhistlePig Pork Chops with FarmStock BBQ Sauce

 WhistlePig Maple Brine

2.5 C Water

1/2 C WhistlePig FarmStock Rye Crop 002 Whiskey

1/4 C WhistlePig Maple Syrup

1/2 C Kosher Salt

3 Bay Leaves

1 Tbsp Black Peppercorns

3 Sprigs Thyme

2C Ice Cubes

Place all ingredients except ice in a medium saucepot and bring to a simmer, or just until salt is dissolved. Add ice and allow brine to cool down completely in the refrigerator.

Place four 1” thick pork chops in a large bowl or container and pour brine over. Allow chops to brine for 8 - 24 hours, preferably overnight.

After brining, remove chops from the liquid, pat them dry, and let them sit out at room temp for 30-45 minutes.

Pre-heat grill to medium-high heat and allow to come up to temp for 15-20 minutes.

Season pork chops with salt and fresh cracked pepper.

Cook for 4-5 minutes per side, to desired temp (I like mine medium). Baste the chops regularly throughout the cooking process, with the WhistlePig BBQ sauce (below).

*** Let chops rest for 5 minutes before slicing - it’s worth the wait!***

Slice chops and enjoy.

2 C Ketchup

1/4 c Brown Sugar

1/4 c WhistlePig Maple syrup

1/4 c WhistlePig FarmStock Rye Crop 002 Rye Whiskey

1/2 c Cider Vinegar

1/2 tsp Cayenne Pepper

1 Tbsp Onion Powder

1 Tbsp Garlic powder

1 Tbsp Chili Powder

1 Tbsp Black Pepper

1/2 c Yellow Mustard

3 Tbsp Worcestershire Sauce

Salt to taste

Place all ingredients in a medium saucepot.

Simmer on medium-low heat for 1.5 hours, stirring occasionally.

Cool down, and store in the refrigerator in a sealed container.

FarmStock Rye Crop No. 002

Here, at WhistlePig we’re excited to share with you our latest in farm-based innovation and the next step in achieving our FarmStock’s 100% Triple Terroir™ vision - whiskey made from rye grown on the farm, proofed with water from our well and aged in our own Vermont Estate oak barrels.

The FarmStock Rye Crop No. 002 blend was crowdsourced from over 500 bartenders, influencers, and consumers at blending events across the country. The final blend was determined at the national FarmStock Rye Crop No. 002 blending event, held at our Farm, in Shoreham Vermont, in February of 2018.  The selection committee was comprised of key industry notables, craft enthusiasts, and social media contest winners and was led by Master Distiller Dave Pickerell and Chief Blender, Pete Lynch. 

FarmStock Rye Crop No. 002 is composed of 32% two year aged Triple Terroir™ whiskey made entirely on the WhistlePig farm (up from 20% 1 year Triple Terroir™ whiskey in Rye Crop no. 001), 45% 6-year aged whiskey from MGPI in Indiana, and 23% 10-year aged whiskey from Alberta Distillers in Canada.

Tasting Notes Nose: Orange zest, white chocolate, vanilla bean and fresh pear combine with a gentle Rye spice. Palate: Delicate fruitiness gives way to a full-bodied burst of spice, rounded by notes of allspice and cinnamon and balanced with a pleasant dryness Finish: White pepper and oak spice leave a light and surprisingly lengthy finish

Of royal parentage, Mauve entered the world at the KuneKune royal summer palace in the small town of Owaka, New Zealand on a sunny day in February 2004. Located in the Clutha District on the South Island, Owaka lies in a marginal, but scenic, sheep raising area.  

A devoted rugby fan, Mauve boarded a Maori war canoe at the tender age of 3 to attend an exhibition by her beloved All Blacks at the Los Angeles Coliseum. A dashing, fun-loving KuneKune boar named Mortimer, a fellow rugby enthusiast, accompanied her on her Trans-Pacific voyage.  

Smitten with America’s friendly population and lax animal husbandry regulations, Mauve renounced her title and, along with Mortimer, forsook the arduous return paddle across the Pacific. Instead, the newly-infatuated couple elected to hitchhike across America to see what the Western Hemisphere had to offer. The pair spent a year rambling on the Interstate Highway system, studiously avoiding America’s Barbeque Belt.

Mortimer and Mauve soon established residence at a derelict former dairy farm in the Green Mountain State – home to many vegetarians. Their abode, WhistlePig Farm, was presided over by a dandyish former reality show contestant who sought to convert the farm into the world’s first grain-to-glass rye whiskey distillery. To Mauve’s delight, and Mortimer’s chagrin, the farm was staffed exclusively by burly, bearded, and often shirtless, former Middlebury College rugby players, supervised by Master Distiller extraordinaire Dave Pickerell, of West Point and Maker’s Mark fame.  

After months of wandering, Mauve was home. Ensconced in her new residence, Mauve supervised the unprecedented growth of the farm, including the construction of the still, christened “The Mortimer” after her beloved. As the brown spirits category exploded, WhistlePig set the bar as the ultimate expression of luxury rye. As Matron of the Brand, Mauve tirelessly promoted WhistlePig, greeting visitors to the Shoreham farm with friendly snorts and unobtrusive, dignified pleas for kitchen waste. Despite her earthy homestead, Mauve’s regal ancestry bestowed upon her sufficient class and élan to carry off command performances at the finest restaurants and lounges in Manhattan. She become the talk of New York’s social elite with her scene-stealing struts down the red carpets at Lincoln Center and the Met.

Mauve’s life took a sad turn in 2014, when her partner Mortimer, Sr. went to his eternal rest following an unfortunate breeding accident.  Nevertheless, Mauve kept her spirits up, and found joy in her son Mortimer, Jr., her sheep friends and the countless farm guests whose days she brightened with her irrepressible optimism and cheerful extroversion.  

On Valentine’s Day 2018, Mauve passed into the next world. The autopsy revealed clinical signs of a broken heart. Her spirit lives forever in the lives of those she touched, and in her son Mortimer, Jr. Just as her spouse Mortimer was immortalized in the 2014 Boss Hog release – “The Spirit of Mortimer” – we fully expect that Mauve’s legacy will continue through the work of her beloved colleagues at WhistlePig Farm. WhistlePig Rye Whiskey: the official drink of Groundhog Day

Groundhog Day 2018 marks an auspicious anniversary for Marmota monax. Most commonly referred to as a groundhog, the creature, in certain regions, is also called a woodchuck, a groundpig, a moonack, or, most aptly, a whistlepig. 130 years ago, there occurred two epochal moments in WhistlePig history.

As recorded by writer Bruce Felton in “What Were They Thinking?: Really Bad Ideas Throughout History”, the New Hampshire state legislature, in 1885, established a committee to address one of the most profound threats of that simpler age: the New Hampshire Legislative Woodchuck Committee was chartered.  An exhaustive study by the Committee concluded that the whistlepig’s redeeming qualities paled in comparison to the menace it posed to the body politic.  

The Hon. Charles R. Corning, the obviously insane Chairman of the Woodchuck Committee, as if to prove that government officials have too much free time on their hands, submitted the following report to the legislature:

"Your committee finds that the woodchuck is absolutely destitute of any interesting qualities . . . .  Its body is thick and squatty, and its legs so short that its belly seems almost to touch the ground. This is not a pleasing picture . . . .  Like thieves in all climes, the woodchuck remains securely concealed in its hole for a great part of the day . . . .

"The woodchuck, despite its deformities both of mind and body, possess some of the amenities of a higher civilization. It cleans its face after the manner of the squirrels, and licks its fur after the manner of a cat. Your committee is too wise, however, to be deceived by this purely superficial observation of better habits.

"Contemporaneous with the ark, the woodchuck has not made any material progress in social science, and it is now too late to reform the wayward sinner. …The woodchuck is not only a nuisance, but also a bore. It burrows beneath the soil, and then chuckles to see a mowing machine, man and all, slump into one of these holes and disappear. . . .

"Your committee is confident that a small bounty will prove of incalculable good. . .  .”

Based on these conclusions, the Committee declared an “open season.”  Through an act passed on September 11, 1883, the state legislature authorized a 10-cent bounty for every whistlepig tail presented to a New Hampshire town selectman (the New England equivalent of a city councilor).

The bold sons of the “Live Free or Die” state took to arms in the fields and forests of New Hampshire, slaughtering whistlepigs with a vengeance.  In one six month period, 122,065 whistlepig tails were processed for payment by State Treasurer Solon A. Carter.  Fearing a budget crisis precipitated by this bloodbath, an emergency session of the New Hampshire state legislature suspended the bounty, with the last claim paid out in 1888.  Thus, this year we celebrate the 130th anniversary of the end of the Great WhistlePig Massacre.   

On a further, happier note, this past fall we also celebrated the 130th anniversary of the Groundhog Picnic in Punxsutawney, Pennsylvania.  At the picnic, Punxsutawney Phil, the renowned whistlepig weather forecaster, is, and has been for the last 130 years, plied with “groundhog punch.”  The punch is touted as a mystical “elixir of life” which grants him extraordinary longevity.

While WhistlePig Rye Whiskey can promise no such miracles, a properly mixed “WhistlePig punch” is sure to raise your animal spirits.  And whether you choose to call Marmota monax a groundhog, a woodchuck or a whistlepig, there is only one adult beverage fit for sipping on Groundhog Day.  WhistlePig Rye Whiskey: everything else is hogwash.

WhistlePig Secures $25 Million Credit Facility From JPMorgan Chase

New Line of Credit Positions Company for Accelerated Growth

SHOREHAM, VT – (May 8, 2017) – WhistlePig LLC, the premier rye whiskey company, today announced that it received a $25 million asset-based line (ABL) of credit from JPMorgan Chase, replacing its current ABL and more than doubling its access to liquidity. The credit facility is a reflection of WhistlePig’s performance to date, expected growth, and strong existing inventory position. It will provide the company with incremental funding to accelerate the production and aging of premium rye whiskey.

“This is a terrific vote of confidence,” said Roland van Bommel, WhistlePig’s Executive Chairman. “We’re excited to apply these incremental funds, and the expertise of Chase’s talented local and beverage banking teams, to further build our business and produce more rye whiskey for the world to enjoy.”

The credit facility will support all aspects of WhistlePig’s business, with a particular focus on further increasing the company’s whiskey reserves and building new infrastructure to support those reserves. In addition to laying down additional barrels of whiskey, the company is building new warehouse facilities, increasing its in-house storage capacity to 35,000 barrels of whiskey.
