“Jen’s Pork Loin” Recipe

Ingredients

1 half pork loin or pork tenderloin

Desired seasonings (seasoning blend from video to follow pork loin instructions)

Instructions:

Preheat oven to 500°, covering any vent pipe on you stove if you have one (using an overturned metal bowl works great!)

Note the weight of your pork on the package and calculate the active cooking time. For pork loin cook for 7 minutes per pound. For pork tenderloin cook for 5 1/2 minutes per pound. Round up if it falls between two solid measurements. *Note in pork tenderloin: there are often two tenderloins in a package, so you will actually calculate the cooking time based on the weight of each tenderloin, which would mean dividing the weight by however many individual tenderloins are in the package.

Place pork in baking dish or on roasting pan, preferably lined with parchment paper. Season your pork loin/tenderloin by patting dry, drizzling olive oil over top, and sprinkling with seasonings desired. Flip pork over and repeat on the other side.

Place pork in preheated oven and cook for calculated time. Turn oven off and set timer for 1 hour. Do not open the door during this time! After 1 hour check the internal temperature of the pork to make sure it has reached 145°. When cut into, the meat should be white or a darker color for dark meat, but should not be translucent and pink at 145°.

Can be made with potatoes and vegetables roasted on the same tray as the pork is desired. Also very good with baked or mashed potatoes.

Cinnamon Seasoning Blend

2 teaspoons cinnamon

1/2 teaspoons garlic powder

2 teaspoons dried herbs (herbs de province, dried oregano, dried thyme, rosemary, etc)

3 teaspoons (1 tablespoon) kosher salt

Mix together and rub onto meat and sprinkle over vegetables if desired.

Macaroni and Cheese from Scratch Video Recipe

Ingredients:

8 ounces elbow macaroni noodles

4 tablespoons butter (1/2 stick)

4 tablespoons flour (1/4 cup)

2 cups milk

2 cups shredded cheddar cheese

1/2 teaspoon salt

Pepper to taste

1/2 teaspoon garlic powder (optional)

Bread crumbs and extra shredded cheese (optional)

Directions:

Cook pasta in salted water 1-2 minutes less than the package directs to not overcook pasta. Drain and run cold water over pasta and let drain while finishing sauce.

Melt butter in large saucepan or a pot over medium to medium high heat. Once melted and bubbly sprinkle flour over top and wisk together to form paste. Cook for 1-2 minutes before very slowly adding milk and whisking to incorporate before adding more. Stir to smooth mixture once all milk has been added and reduce heat to medium to not burn sauce and let sauce start to bubble. Once sauce has begun to bubble gradually add shredded cheese, about 1/2 cup at a time, whisking between additions to thoroughly melt cheese. Add seasonings and taste sauce before adding pasta. Dump cooked pasta into pot and stir to coat evenly with sauce.

You can immediately serve like stovetop macaroni and cheese at this point, or you can add the breadcrumbs and extra shredded cheese and bake in an oven safe dish (sprayed with non-stick spray) at 400°F for 15-20 minutes, until getting crispy and brown on top and middle heated through.

While I’m always skeptical of anything that claims to be “the best”, this marinade was pretty dern good. Chicken without any marinade will taste like nothing, but chicken with this marinade will just taste like chicken. Ready to be used for “That Sandwich” or is great cut up on salads!

Creamy Blueberry Pie

A sweet, custard-y sour cream mixture is spooned over fresh blueberries, topped with a sweet buttery crumble, and baked. If desired, garnish with mint sprigs and additional blueberries.

This is one of my go-to dessert recipes especially in the summertime.

Granola recipe

5 cups old fashioned oats

2-3 cups nuts, seeds, coconut

1-2 teaspoons cinnamon (optional)

1/2 teaspoon salt

1/2 cup vegetable oil

1/2 cup honey or maple syrup

4 teaspoons vanilla extract

Dried fruit (optional)

Mix dry ingredients together in large bowl and mix liquids in measuring cup. Add liquid to dry ingredients and mix well until liquid is evenly distributed. Spread evenly onto a large baking sheet (preferably a half sheet pan with an edge on it) covered with parchment paper. Flatten mixture with flat spatula, hands or large spoon. Bake at 325° for 40-45 minutes, until golden brown on the top. Let cool completely and break into smaller pieces. Add dried fruit if desired. Keep in an airtight container for up 6-8 weeks. Delicious served with milk or yogurt.
