Ah Joy, Went to the super market to get shopping today, The staff suddely made a racket about something, and a few of them went outside, when I left I found out what it was. Two teenagers, threatning to kill the staff and blow up their houses. Ahh, reminders of why I'm moving to Japan after graduation. 😣

ピーマンとセロリのきんぴら // Pepper & Celery Kinpira (Recipe) Kinpira only takes a few minutes, so I make it often when I need something quick to round out dinner. It’s also great for using up leftover veggies.

Incidentally, cooking tip – when you’re making Japanese food, you season in this order: sa-shi-su-se-so (さしすせそ).

・SA [satou / 砂糖] - sugar First because sweetness is the slowest taste to absorb. (Sa also stands for sake! Which should be added before sugar.) ・SHI [shio / 塩] - salt  Draws out moisture from veggies and gaminess from fish/meat. ・SU: [su / 酢] - vinegar If added before salt, excessive moisture prevents it from incorporating well. ・SE: [seiyu* / 醤油] - soy sauce Add near the end because heat changes the flavor of fermented foods. *Classical spelling; the modern spelling is shouyu. ・SO: [miso / 味噌 ] Same as soy sauce, add any miso near the end. (If you’re using mirin, it also goes in now.)

This recipe only uses the sa, shi, and se, but I always follow the order. I was also taught to add the soy sauce around the edges of the pan for maximum aroma (and probably also because it’s less hot). Whether that actually has an effect is anyone’s guess, but it’s a nice little flourish and anyway, cooking is more enjoyable with traditions and memories of the people you learned them from. I’m a sap, what can I say?
