CRISPY WHITE BEANS WITH SAUTEED GREENS AND A POACHED EGG
This is a super easy recipe, made in literally 15 minutes. Super easy, healthy, low carb, protein packed vegetarian dish. Honestly, where’s the bad here???
– Ingredients
Eggs
Spinach (2 cups)
1 can Cannellini beans
1 tablespoon chili powder
1 tsp coriander
1 tablespoon cumin
Juice of 1 lemon
¼ tsp red pepper flakes
olive oil, salt, pepper
– Instructions
1. Rinse and drain the can of cannellini beans. Toss them in a frying pan with olive oil, chili powder, coriander and cumin. Turn on to medium-high heat and cook for 15-20 minutes, or until nice and crispy.
2. Toss the spinach, or whatever greens you would prefer, onto a frying pan with olive oil and lemon juice. Salt to taste. Cook until wilted.
3. EASY EGG POACHING: The way I poach my eggs is not the traditional way because really who has time for that? I put about a tablespoon of olive oil and ¼ cup water into a frying pan. Then I crack my egg into the frying pan and cover. Cook about 2 minutes. Before serving, cut off the extra egg whites so it looks like a classic poached egg (see picture)
4. Before serving, sprinkle with some extra red pepper flakes
