Brown Rice - All The Health Benefits You Are Missing

Brown rice is far more nutritious than the polished milled white rice and the benefits are various.

Makes one wonder why rice had to be polished or milled in the first place! We dug around into the history of rice, specifically white or polished or milled rice, and we found some answers. Once polished, white rice weighs lesser and even has a longer shelf life than the brown or unpolished rice. This made polished rice a favourite with traders and middle men, thus making white rice a more profitable commodity. This, in turn, helped proliferate the consumption of polished white rice all the more across the globe

Healthy Vegetable of Northeast India - now a Cash Crop

Sohphlang is a healthy vegetable of northeast India with medicinal properties. It acts as a deworming agent. Used to grow in the wild - is now a cash crop.

Why eat Sohphlang? “Sohphlang is seedless and it is small. I eat it because it’s crunchy, juicy, mildly sweet, bite-sized, and refreshing,” was how Sainbor, a senior design executive at Chillibreeze who also supports the creative team in Zizira, summed it up.

Preparation

Rinse the rice till the water runs clears of the starch

Soak the rice for one hour then set it aside

Slice the almonds, dried coconut and cashews

Grind the green cardamom to a fine powder

Instructions

Use a strainer and drain out the water from the rice

Heat ¾ of the milk and let it come to a boil

Reduce the flame and add the rice

Stir the milk and rice till it looks well-cooked while ensuring that the rice doesn’t stick to the vessel

Once the rice looks well-cooked, add sugar and the condensed milk

Continue to stir frequently so that there are no lumps and the rice doesn’t stick. Remember to keep scraping the sides and adding the organic milk so that the rice doesn’t stick to the sides

Watch out for when the rice and the milk have mixed well together. You will now notice that the kheer is thicker and sticky and the color has changed to a creamy white

Now add the almonds, dried coconut, cashews, pistas and raisins

Continue to stir for the next 5 to 10 minutes till all the nuts and raisins are well mixed,

Preparation time – 10 mins. Serves – 4

Step 1: Lightly roast Nei-lieh for 3 min under low heat. Once they crackle and release a nice aroma, set aside to cool. Pound with mortar and pestle or dry grind in a grinder (for a few seconds).

Step 2: Get the Ingredients ready.

Step 3: Mix together the radish, onion, chilli and the powdered Nei-lieh. Add salt and lemon juice to taste. Toss the ingredients until evenly mixed and serve fresh.

Tips:

Squeeze out the watery part from the chopped radish.

Take care while roasting the seeds. Use low heat. Do not over roast.
