Ok all, since 2006 the lamington has been honoured with its own National Lamington Day, which is 21 July.

What is a lamington you say?

"I'm not saying,,,, I'm already covered in dam chocolate!"

Ok,,,, shhhh Kate,,, now the Aussie lamington is a cake,,,and likely invented by Armanzd Galland, the french chef to Charles Cochrane-Baillie, the 8th Governor of Queensland (Lord Lamington).

He is believed to have improvised the treat by dipping leftover sponge cake in chocolate and rolling it in coconut to serve unexpected guests.

Kate, while the true inventor's identity and exact details are still playfully debated,

The cake was after all named after Lady Lamington, and the very first recipe for this sweet treat was published in the Queensland Country Life newspaper in December 17th 1900.
