And it isn't even Thanksgiving - but no one really needs an excuse to make this scrumptious creation!
Apple Mallow Sweet Potato Bake
Ingredients
1/2 cup Brown sugar, packed
1/2 tsp. Cinnamon
2 Apples, sliced
1/3 cup Pecans, chopped
2 15 oz. cans Princella or Sugary Sam Cut Sweet Potatoes, drained
1/4 cup Margarine
2 cups Miniature marshmallows
Directions
Preheat oven to 350°F. In large bowl, mix brown sugar and cinnamon. Toss apples and nuts with combined brown sugar and cinnamon. Alternate layers of apples and sweet potatoes in 1 1/2-quart casserole. Dot with margarine. Cover and bake for 35 to 40 minutes. Sprinkle marshmallows over sweet potatoes and apples. Broil until lightly browned.

Creamy Pappardelle with Leeks and Bacon
2 tablespoons olive oil
1 tablespoon unsalted butter
4 slices thick-cut bacon, cut into 1/2" pieces
2 medium leeks, white and pale-green parts only, halved lengthwise, sliced crosswise
Kosher salt
3/4 cup heavy cream
2 teaspoons chopped fresh thyme
1 pound pappardelle or fettuccine
1 cup finely grated Parmesan
preparation Heat oil and butter in a large heavy pot over medium heat. Add bacon and cook, stirring often, until fat is rendered and bacon is crisp, 5-8 minutes. Add leeks and season with salt. Increase heat to medium-high and cook, stirring often, until leeks begin to brown, 5-8 minutes. Add cream, thyme, and 1/2 cup water. Bring to a boil, reduce heat, and simmer, stirring occasionally, until sauce is thickened and coats the back of a spoon, 5-8 minutes.
Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain pasta, reserving 2 cups pasta cooking liquid.
Add pasta, Parmesan, and 1 cup pasta cooking liquid to sauce and stir to coat. Increase heat to medium and continue stirring, adding more cooking liquid as needed, until sauce coats pasta.

Rudolph’s Hot and Spicy Pork Rind Chicken Wings
8 bags of Rudolph’s Hot and Spicy Pork Rinds
3 lbs of fresh chicken wings
4 eggs
Directions
Crush one bag of Rudolph’s Pork Rinds at a time in your food processor until they are a fine crumb. Place the crumbs in bowl. In another bowl, beat 4 eggs. Dip the chicken wings in the eggs then coat with pork rind crumbs and fry until cooked. Remove and place on a paper towel to drain extra grease then layer them in a baking pan with your favorite hot sauce. Broil for 5 minutes to re-crisp and serve with blue cheese dressing and celery sticks.

Ingredients
1 Tbsp. Olive oil 1 small Onion, chopped 1 Tbsp. Fresh ginger, finely chopped 1 tsp. Curry powder 1/4 tsp. Ground cumin 1 tsp. Ground cinnamon 1 pinch Cayenne pepper 1 Tbsp. Sugar 1 quart Chicken Broth 3 15 oz. cans Princella or Sugary Sam Cut Sweet Potatoes, drained Salt and pepper to taste 1 Tbsp. Fresh lime juice 1 Tbsp. Fresh cilantro, chopped 2 Tbsp. Plain yogurt
Directions
In large saucepan add olive oil; saute onion and ginger over medium heat until soft. Add curry powder, cumin, cinnamon, and cayenne pepper; cook for 1 minute. Add sugar, chicken broth and sweet potatoes to spice mixture; cook until heated through. Puree mixture in a blender until smooth. Season to taste with salt and pepper. Stir in lime juice just before serving. Top with chopped cilantro and yogurt.
