Italian Turkey Sausage, Gemelli, White Beans, and Broccoli
Enjoy this delicious and quick to make lunch or dinner of Italian turkey sausage, Gemelli pasta, white beans, broccoli, and sun-dried tomatoes.
I know I've probably mentioned 100 times that I love Sundays for meal prep. There's something so satisfying about getting meals ready and then not having to stress about it during the week. I like the fact that my family is eating food that I made them. When I can’t be with them during the day it’s my way of feeling like I can be part of their day even when I'm not.
So let’s talk about this super easy meal. We buy the Aldi brand Italian Turkey sausage. It does not contain preservatives and no big globs of gristle. Which quite honestly turned me off from sausage in general for many years. When I prepare this sausage I squeeze the meat out of the casing because I feel it’s chewy and I like to break up the pieces when I’m cooking them in the pan.
This Gemelli pasta is the best thing ever. I buy it at Target and you can heat it up in 90 seconds. As for the rest of the ingredients, I thought the cannellini beans were a perfect compliment to the broccoli and sun-dried tomatoes. And don’t forget to sprinkle on a bit of parmesan cheese because yeah it’s cheese.
Makes 5 plus servings
INGREDIENTS
Olive oil spray
3 Sweet Italian Turkey Sausage ( WE use Aldi Fit nd Active Sweet Italian Turkey Sausage/ no preservatives)
1 head broccoli, chopped into bite-sized pieces
2 packages Fully Cooked Gemelli Pasta ( We use Barilla Ready Pasta)
1 (15-ounce) can cannellini beans (We use Simply Balanced Organic Cannellini Beans Low Sodium)
1/4 cup sun-dried tomatoes with a little of the oil from the jar
1/4 cup olive oil
Freshly grated parmesan cheese
Salt and pepper to taste
DIRECTIONS
Heat a large skillet over medium-high heat. Let heat for 3 minutes. Spray with olive oil spray and add sausage. I like to squeeze the sausage out of its casing and then break it up in the pan as I'm heating it up. Heat 5 minutes stirring regularly. Add broccoli and heat an additional 4-5 minutes. Stirring regularly. Add pasta, white beans, sun-dried tomatoes, olive oil, salt, and pepper. Stir to combine and heat through 2-3 minutes. Serve hot with a generous sprinkle of freshly grated parmesan cheese and any additional salt and pepper to taste.

Black Bean and Corn Salad with Brown Sugar Salmon
Inspired by many a meal growing up. This healthy and delicious black bean and corn salad is topped with Cedar planked brown sugar salmon.
This meal is perfect for a weekend get together and eating al fresco. Fresh veggies, black beans and plenty of flavors are what Summer cooking is all about and this dish fits perfectly.
While I can’t take credit for the salmon recipe, I am excited to share with you the black beans and corn salad recipe. Family Circle provided the recipe for the salmon and it’s a winner. For serving this dish layer all the salad ingredients in a big bowl. Makes for a lovely presentation. This is a healthy meal you will enjoy sharing.

INGREDIENTS for Cedar Planked Salmon
1 Cedar Planked Salmon (Recipe from Family Circle)
INGREDIENTS for Black Bean and Corn Salad
2 (15-ounce) cans black beans drained and rinsed
1 (12-ounce) package frozen super sweet white corn cooked according to package instructions
1 cup petite grape tomatoes, sliced
juice from 1 lime
1/2 cup chopped red pepper
1/4 cup chopped red onion
cilantro optional
INGREDIENTS for dressing
1/4 cup olive oil
2 tablespoons honey
1 clove crushed garlic
salt and pepper to taste
DIRECTIONS
Place black beans, cooked corn, tomatoes, the juice from the lime, red pepper, and red onion in a bowl. Stir to combine.
To a separate container add olive oil, honey, crushed garlic, salt, and pepper. Stir to combine and pour over black beans and corn mixture.
Place bean and corn salad on plates and top with generous slices of salmon. Serve immediately.

You will be pleasantly surprised at how easy it is to make your own granola. And the best part is the possibilities for flavor are endless!
Are you pressed for time in the morning? Then this recipe is a perfect addition to your routine.
I get up around 5:45 most days during the week. But last week I set my alarm wrong! So I ended up getting out of bed closer to 6:15. There was a slight panic moment for me but I was able to catch up with my day. No, not because I had granola waiting for me but because I skipped a few steps in my routine. Yes, I brushed my teeth. Eww! I try to get my outfits picked out for several days of the week so I'm not stressing in the morning about what to wear. If I'm running behind I skip on makeup and spend fewer minutes on my hair. It takes me about 30-45 minutes to get ready in the morning. That's not too bad! What do you cut out of your morning routine if you're running late?
So now I'm dressed and downstairs. I pour a cup of coffee and get lunches ready to go. Lately, I've been having smoothies for breakfast with a piece of toast but that's not every day. I like to switch it up. That's where this super quick stovetop granola recipe comes in.
The base is pretty easy to put together but you will have to pay attention to the stove for about 5 minutes. Oats can go from golden brown to overcooked very quickly. Once you’re done cooking the oats you can pretty much add any ingredients you like. I used a bit of salt, cinnamon and vanilla extract in this recipe. In recipes past, I've made nut-free granola, added all types of dried fruit and mixed it up with honey or maple syrup. Sunflower seeds are a winner as well as coconut shreds. Like I said the possibilities are endless!
Makes approximately 2 ½ cups
Ingredients for Stovetop Granola
1 cup rolled oats
5 tablespoons dried cranberries
3 tablespoons shredded coconut unsweetened
1 tablespoon vegetable oil
¼ teaspoon salt
½ teaspoon cinnamon
½ teaspoon vanilla extract
3 tablespoons honey
Directions
Heat rolled oats 5 or so minutes on low-medium heat stirring frequently. Pull the oats off the heat when they are slightly lighter than you want them to be because they continue to cook. This is called carry-over cooking.
Remove from heat. Add dried cranberries, coconut, vegetable oil, salt, cinnamon, vanilla extract, and honey. Stir to combine and let cool a few minutes.
For those a little more ambitious try this recipe for homemade yogurt. I did this two times and it is not quick and easy so if your not up or it no worries.
Ingredients for homemade yogurt
1 quart of milk is equal to 4 cups
1/3 cup of yogurt
food thermometer
Instructions
Heat milk in a medium saucepan to 180 degrees Fahrenheit or 82.2 degrees Celsius. Stir occasionally to prevent a skin from forming on top of the milk. Also, you don’t want the milk to scald.
Turn off heat and let the milk cool to 110-120 degrees Fahrenheit or 43.3-48.8 degrees Celsius. This will take about 15-30 minutes maybe longer. Milk can not go below 110 degrees Fahrenheit or 48.8 degrees Celsius. If it does just reheat a little.
Mix in yogurt and stir to combine. Place milk and yogurt into your yogurt maker for 5-10 hours depending on how you like your yogurt. I tried 6 hours this time. Also the longer it incubates the more tart it will get. I may try longer next time.

Cover and refrigerate in a glass, ceramic or plastic container for several hours. When ready to serve, pick your favorite toppings.
