Tuna Casserole
BBQ Chicken!
Soft and Chewy Cinnamon Rock Cake
Ingredients:
2 cups cake flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 stick cold butter (cubed)
1 large egg
1/3 cup milk
Easy Bake Steps:
Preheat oven to 350 degrees, grease and flour a large cookie sheet
Combine flour, sugar, baking powder, cinnamon, and salt in a mixing bowl.
Using a fork or a pastry cutter, cut butter into the dry ingredients until the ingredients look like wet sand.
Beat the egg & milk together and pour it into the butter mixture.
Fold in to make a stiff dough.
Drop tablespoon size dough balls 2 inches apart and bake at 350 degrees for 25 minutes.
Sugary Vanilla Glaze
Ingredients:
1 1/2 cups confectioners' sugar
2 1/2 teaspoons milk
1/8 teaspoon salt
1/4 teaspoon vanilla extract
Easy Steps:
mix sugar, milk, salt and vanilla until smooth.
Drizzle over rock cakes and enjoy your easy baked treat!
Crispy Thyme Roasted Chicken
Ingredients:
2 pounds chicken thigh and leg
1/4 cup olive oil
1/2 teaspoon sea salt
1/2 tablespoon black pepper
2 tablespoons fresh thyme
4 cloves garlic (chopped)
Easy Bake Instructions:
Preheat oven to 425 degrees
On a large baking pan lay out chicken pieces.
Evenly pour olive oil over all of the chicken
Rub chicken with garlic, thyme, salt, and pepper.
Bake at 425 degrees for 35-40 minutes until skin is a dark cold crispy brown and chicken is cooked through.
Allow to rest for 15 minutes before serving. Easy baked deliciousness!
Light and Fluffy Blueberry Muffin
Ingredients:
1/2 cup unsalted butter
1 1/4 cups of sugar
1/2 teaspoon salt
2 eggs
2 cups all purpose flour (divided)
2 teaspoons baking powder
1/2 cup butter milk
1 pint fresh blueberries (picked by hand is best!)
2 tablespoons white or sanding sugar
Easy Steps:
Preheat oven to 375 degrees and line muffin pan with liners
In a mixing bowl, cream together butter, sugar, and salt until light and fluffy
Beat in the eggs one at a time allowing each one to fully incorporate.
Mix 1 3/4 cup of flour and baking powder together
Alternate adding the dry ingredients and the butter milk until all ingredients are incorporated.
Crush 1/4 of the blueberries and add them to the batter.
Mix the rest of the whole blueberries with the left over flour and fold them into the batter.
Fill muffin cups and sprinkle the top with white or sanding sugar for a crystally sugar crust.
Bake at 375 for 30 minutes or until the tops are golden brown and the muffins have reached maximum height.
Let cool, serve, and enjoy!
Mango Shortbread Cookies
Shortbread Ingredients:
1 1/2 cup cake flour
1/3 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla
1 stick cold unsalted butter
Easy Steps:
Preheat oven to 350 degrees
Combine flour, sugar, salt, and vanilla in a mixing bowl.
Cut cold butter into small pieces and cut into dry ingredients using a pastry cutter or two forks.
Line cupcake pan with liners and fill each liner about half way full and press dough down to compact. Bake for 16-18 minutes until edges turn a light golden brown.
Mango Topping Ingredients:
3 mango's diced into small pieces (and the juice)
1/4 cup sugar
1/4 cup water
lime zest
Easy Steps:
Combine mango, sugar, water, and lime zest in a medium saucepan over medium low heat.
Bring to a boil and reduce heat to low.
Let simmer for 15-20 minutes or until post of the liquid has reduced.
Remove from heat.
Pour the mango mixture on top of the hot cookies from the cousin and spread evenly.
Place back in oven for another 18-20 minutes or until the mango starts to caramelize.
Let cool and munch away!
Salted Caramel Cupcakes
Creamy Dreamy Vanilla Cupcakes
Ingredients:
1 1/2 cups cake flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 stick unsalted butter (room temperature)
1 cup sugar
1/2 cup milk
1 teaspoon pure vanilla extract
Easy How To:
Preheat oven to 375 degrees
In one bowl sift together cake flour, baking powder, and salt. Set aside.
In mixer or with hand mixer cream together butter and sugar until light and fluffy.
Add eggs one at a time allowing each one to be fully incorporated.
Add 1/3 of the dry ingredients and allow them to mix in.
Add 1/4 cup milk and again let it mix in.
Repeat above steps until all the dry and wet ingredients are mixed.
Add vanilla.
Line a cupcake pan with liners and fill each cup about 2/3 of the way. (Yields about 12)
Bake in oven at 375 degrees for about 17 minutes or until fluffy and golden brown. Let cool 20 minutes.
Using an apple corer or knife cut out small rounds from the center of each cupcake and place to side. Use the recipe for my Ooey Gooey Salted Caramel and fill each cupcake. Replace the the cupcake rounds and frost with vanilla frosting. Drizzle the caramel all over the top of the cupcakes and sprinkle sea salt on top of each cupcake. Unwrap and munch!
Vanilla Frosting
1/2 cup butter (1 stick) at room temperature
3 cups powdered sugar
1/4 cup whole milk
1 teaspoon pure vanilla extract
Easy How To:
In an electric mixer or using a hand mixer beat butter until light and smooth.
Add powdered sugar, milk, and vanilla. Beat until creamy and fluffy
Ooey Gooey Salted Caramel Sauce
Ingredients:
1 cup sugar
1/4 cup water
3/4 c heavy cream
2 tablespoons unsalted butter
1/2 pure vanilla extract
1/4 tsp sea salt
Easy To Follow Steps:
Place sugar and water in medium sauce man over medium low heat until the sugar dissolves. **Do not stir!
Boil 5 - 6 minutes until the sugar turns a deep shade of amber.
Take the pan off of the head and whisk in heavy cream. The pan will look like the second picture.. don't be afraid of the bubble!
Using a wooden spoon, stir in butter, salt, and vanilla.
Move the caramel sauce into a dish or container and let cool.
Use this recipe for anything! The creamy smooth texture is perfect along side ice cream, apples, cookies, etc.!
