What is your greatest extravagance?

FOOD!!

I’m a foodie! I love to eat good food and snacks.  being Filipino, eating and enjoying food is part of our DNA.  Food is more than just for sustenance, it also meant to be experienced. 

Don’t get me wrong, I'm no glutton. Food is consumed in moderation and as much as possible without any leftovers.

I love food so much that I chose it as a profession, after years of wondering what I should do with my life, I have decided to be in the food industry.

For the past 10 years, my life has revolved around the foodservice industry.  Worked as a consultant, line cook, barista, executive chef and breakfast cook. It has been one of the most amazing and fulfilling things I have done and I have gotten to taste the most wonderful dishes that I never thought I would.

(FYI: that's one of the easiest questions)

Question #3

What is the trait you most deplore in yourself?

overthinking.  

with this comes, over planning, what-ifs, expecting, jumping into conclusions and situations, at the end of the day not knowing what I have gotten myself into.

there have been so many times in my life that I have based important life decisions on overthinking and I have (so many times) kicked myself doing so.

but each time, I have learned to find the positive and strive to find a solution to whatever situation I have gotten myself into.  I am proud though, that I have always stuck with my decisions and never tried to find the easy way out.

“What is your greatest fear?”

disappointing the people who love and care for me the most.  

especially the ones who’s been there since the start.

i’ve always been afraid of letting the whole world down but lately, I've realized that it shouldn’t matter what people who haven’t contributed anything your life think, the ones who love you the most will judge you the least.

my heart aches for the thought of not being able to see my grandma before her number is called. my family will always be number 1. they have shaped and molded me to become the person that i am.  

my faith, morals, class, and patience came from them.  i am so honored and humbled that i was born into such an amazing family.

“What is your idea of perfect happiness?”

perfect happiness...

defining happiness, in general, is a feat on its own.   

happiness is when all the people that i love are happy and healthy.

happiness is when my mind, body, and spirit is synced.

happiness is having the freedom to do things i have always wanted to do without the fear of judgment.

but what is perfect happiness?

it is when the world realizes that we are all human beings.  No matter where we are from, the color of our skin, the language we speak and who we choose to love, we are all the same.  the fear of ignorance mixed with the pride breeds the hate.  the sooner we ALL realize, the sooner we will achieve perfect happiness.

how this all came to be

yesterday, as I was blissfully strolling through the isles of our local target, on the shelf of where the journals are at I saw this “book”,  started flipping through it and it got me curious about how I will answer these questions.

when I got home, read a few more pages and answered them in my head. I was amazed by my answers and realized how much my views have changed. so I decided to make this page and share with the world how much different or similar I was from 10 years ago.
