it’s all about hannibal waxing poetic about god, not because he’s religious but because god’s a source of amusement for him, and a sort of affirmation even, of his own control and power (e.g the church collapses) and because “defying god, that’s his idea of a good time”, and up until the moment he meets will, the concept of surrendering to something bigger than himself is foreign to him. and it’s about hannibal saying god is “matchless in his irony” and how, by the end of the show, that really proves true because hannibal does surrender to something (in this case, someone) bigger than himself and he does find his god and it’s one that loves to defy him right back
