Recipe of the Week! Cheesy Volcannon potato skins. Roast 4 large baking potatoes for approx 1hr, fry 2 sliced onions then roast next to potatoes for 20 mins, shred 150g spring cabbage or spring greens & steam for 5 mins. Half the potatoes & scoop out mash, mix with large spoonful of quark, roasted onions, spring cabbage & 40g reduced fat cheddar cheese & season. Spoon mixture back into potato skins, scatter with chopped tomatoes & sprinkle a further 40g reduced fat cheddar on top, bake for further 15 mins.
