ArteMare Selects [Ibiza Edition]: ME Ibiza Hotel. Ibiza, Islas Baleares, Spain

We recently had the pleasure of visiting ME Ibiza on our Ibiza island hop with Just Luxe magazine. Located on the quieter side of the island in Santa Eulalia, the 205-room ME Ibiza is an ArteMare must for summer in Ibiza. Weekend Cocktail: Peach + Mint Rosé Spritzer

1/2 ounce St-Germain

4 ounces rosé

4 dashes Peychaud’s bitters

2 ripe peach slices

2 mint sprig

1 heavy splash of sparking water

Watermelon slices, champagne grapes, raspberries for garnish (optional)

Place peach slices, mint sprig, bitters, and St-Germain in each rocks glass or stemless wine glass. Add rosé and top off with sparkling water

Garnish as desired with watermelon, grapes and/or raspberries
