Ingredients: 2 ripe bananas. 1/2 cup gluten-free rolled oats. 1/2 cup almond milk. 1 tablespoon chia seeds. 1 tablespoon maple syrup. 1/2 teaspoon cinnamon. 1/4 teaspoon nutmeg. 1/4 teaspoon vanilla extract. Toppings: sliced banana, chopped nuts, coconut flakes, cacao nibs.
Instructions: In a bowl, mash one banana with a fork. Add oats, almond milk, chia seeds, maple syrup, cinnamon, nutmeg, and vanilla extract. Mix well. Cover and refrigerate overnight, or for at least 2 hours. Before serving, slice the remaining banana and add it to the bowl along with the toppings.
