So I basically just made my own McMuffin without the muffin!
One day
One day I'll post at the end or the beginning of the week and be proud to say I managed a whole week without grains. This week is not that week.
I had an impromptu half day on Thursday so surprised the kids by coming home early, packing a picnic, and off we went to the local country park. I was good and packed myself veggie/meat sticks with soft cheese to dip. I then also proceeded to have some of the quiches and 2 quarters of a sandwich!
Yesterday, I had major carb cravings. To the point I was actually seeking them out! I cooked spaghetti and meatballs, it was lush (and I blame my supermarkets for that one, can I find a spaghetti squash anywhere? Seems no-one in the UK has heard of them!), I then happily polished off some cheese puffs, a cherry bakewell, and a wagon wheel!
So todays lunch, I'm not that peckish, yet.... I'm doing a burger with grilled cheese and an egg on top. My dinner will be leftover cottage pie (was going to have it at work for lunch, but came home early, I'm sure it'll still be good).
Tricked the family in to low carb!
Well, all but number 3! Number 1 didn't like it but ate it politely, number 2 wolfed it down, and ate number 3's! Was a hit with the husband too :-)
I made cottage pie with cauliflower mash, and I mixed the mash with store bought carrot and sweet mash, served with gravy.
Oh and I added parmesan cheese on top for a nice crust, was lush!
Sadly though my blender has completely died, it's served me well, may it rest in peace! Therefore my cauliflower part of the mash was completely lumpy as I could only chop it so fine! But it was still perfectly tasty!

So trying these!
Total win!!!! Loaded burgers with coleslaw and celeriac fries. I seasoned the fries with pepper and a dash of fajita spice. I've never had celeriac before, t'was nice! I think I need to perfect getting them crispy, half kinda were, didn't bother me though they were lovely, and I'm totally stuffed! So pleased I have a chip substitute! Next I'm going to try courgette.
We'll this was thoroughly uninspiring, a real shame. Sea bass which is my favourite, in a parsley sauce - it's the sauce I didn't like. But even more disappointing, the fish was not cooked in the middle! Was one of these 'fish in 5's from Iceland, followed the instructions to the tea, which worked perfectly on the smoked bass. Which by the way, I also didn't like! I'm really needing to find some scrummy dinners. Seen some cool things to make with courgettes though!
Whoopsie
I really did not realise that I hadn't posted since Wednesday! So I've still been fairly good - oh yes now I remember, no I haven't!
I recall now why there was no post on Thursday, because on Thursday the husband went out to his friends, so the boys and I had ''girls'' night in, which of course, includes pizza. Specifically Domino's! But hey, we're on Sunday now and I've maintained my 4lb loss, so no harm done!
Today's lunch was a fried egg and little sausages, and baked beans. I don't really know where I stand on beans, they're very good for you, but very carby. And I know baked beans have some sugar in them.
And.... I admitted defeat with my Windows phone that I love, but it just didn't have the apps that I wanted to use. So I've swapped for an iPhone 5S in gold - I feel like I've gone over to the dark side, and I'm loving it! So I know that those naughty beans cost me a whopping 18.03g! Whoops.
Dinner was a very tasty low carb success though!
Green pepper stuffed with chilli con carne minus the rice, topped with cheddar cheese and baked. Served with some lettuce, grated carrot and lashings of soured cream!
My treat to myself this evening is setting in the fridge - sugar free jelly which I will have with light evaporated milk. Very much looking forward to that!

'Breaded' chicken nuggets. Made with ground almonds, sea salt and cayenne pepper. Totally lush, and I'm totally full. I've been very good today and the boys all asked for hot chocolate before bed - so I treated myself. And I'm really not feeling bad about it. For lunch today I had a garden salad with BBQ chicken and soured cream, also lush! Still need to get a handle on breakfast though, rather stuck there. Now to ponder what to take for lunch tomorrow....
Oooooo, it works!
Forgot to weigh myself this morning, but did this evening. Which is grand actually because it was roughly 10pm when I weighed myself last, approximately 1.5 weeks ago when I decided to try again - now I haven't been consistent, have had 2 days totally off the wagon, but otherwise I truly believe I've stuck to my 100g or there abouts, even if half of them were sugar!
4lbs lighter. Now there's my motivation to keep going!
Fake pasta has gone from interesting to YUK!
Had that pasta again, Number 1 child had a friend over for tea, and I made macaroni cheese - with less flour than usual, and then added some of the sauce to my pasta and baked separately.
Oh my word I cannot describe how horrid it was, I think when I reviewed it the first time I must have forgotten the texture, I know I said it was rubbery but oh my oh my. Macaroni cheese is my speciality, and I could not eat this. I will try the rice version, but think I will pass on the other pasta packets.
I also now feel rather ill - I had 2 oat biscuits in a meeting earlier at 8.9g each, and this monstrosity above (Of which I really only ate the peas!). I usually have a huge appetite. Mind you my cat is missing so that could be contributing. Lack of appetite I don't mind, I welcome it (my appetite is usually huge), but I'd rather not feel so sickly.
Weighing in, motivation or sole destroying?
I am considering weighing myself in the morning, and then again at the end of the month.... considering it.
Breakfast is the most important meal of the day
....well that's what they say, isn't it? I am rather poor in that I never, ever, have breakfast. I remember my new years resolution was to have breakfast, and I did, at work. Got a bowl there, used to zap up some porridge. Then when I originally chose low carb, I'd do scrambled eggs wit some ham. Got rather bored of it if I'm honest. So I'm going to spend a bit of time tonight trawling the internets to hopefully stumble across some inspiration for quick, on the go, low carb breakies.
Definitely need this page to make me behave, after my failings over the weekend, I have picked myself up, dusted down, and started again.... spag bol which was 'spag-less' for lunch, and fish in butter sauce with veggies for tea. Had some nuts, really want the choccy that's hidden upstairs - I had an apple. Good girl.
This could be my first day where I haven't had any naughty's.... fingers crossed.
Weekend Fail.
I hands up admit a carb filled day yesterday. Did the kids burgers and chips, I was just going to have burgers and salad - ended up having the whole kit and kaboodle. Surprisingly though - I ended up giving half to the husband as I just couldn't fit it all in! So although I slipped up, I didn't actually eat as much as what I would have eaten normally.
Saturday I was a bit better, made a roast, I had no potatoes - and the dinner was perfectly filling without them!
Note to self, buy a bigger chicken next time for leftovers. Mind you it was only £3 from Iceland and I had everything else - feeding a family of 5 for £3 isn't bad.
Fake pasta is odd
Odd, but not unpleasant. I certainly couldn't eat it on it's own, but then who eats pasta solely on its on? If I'd ever tried calamari, I'd liken it to that texture (yes I realise I can't really make that comparison! It's kind of rubbery). But once mixed with my bolognaise it was quite passable as pasta. I had the Penne pasta today, and another notable difference was the shape. While it is tubular like regular Penne, the tubes are flat and not really cylindrical.
At work today I made Chocolate tiffins, they turned out amazing. And how do I know? Because I tried one. Okay two. Two teeny weeny little squares. I'm going to have to do something savoury and non-pastry related next week.
I fobbed the kids off tonight and managed to sell them a picnic on the floor of sandwiches, quiche, cheese and veggies (and no, number 3 did not eat any vegetables) - it is just too hot to cook.
For me I had some pastry-free cheese and ham mini quiches that I made spur of the moment before bed yesterday - lush, and so so quick and easy. I made some tuna mayo and sweetcorn salad, and served it on baby gem lettuce leaves. That was rather lovely - honestly I'd have preferred pitta breads, and I do have 2 packs in the house, both, currently, still sealed! Then I randomly added some corn on the cob.
Lets forget the 2 tweeny weeny chocolates I had earlier.... and the milky way after dinner.... well it was 2 packs of 2. 2+2 = 4. I have 3 children, the husband is out, and well, it just happened. I guess I'm feeling guilty, I've let myself down again - day 3 of posting and not one sugar free day. I suppose at least if I'm honest here, I'm not kidding myself - and like the title says, this blog is my motivation.
Still puzzled, but looking forward to tomorrows lunch!
So.... net carbs is the carb count minus the fiber content, but including the sugars, fair enough. But I also read that in Europe the fiber content has already been taken off. I really need to clarify that, because if that's the case the 20g goal I saw on another page today seems wildly unrealistic.
I am hoping so much that my little pasta packet tastes yummy! Just whipped up an individual portion of bolognaise with frozen mince and hey presto, spag bol for me :-) and some chilli and lemon lentil chips should the fancy take me! Making chocolates at work tomorrow, now there's a test of will!
Time for research
Just seen someone state the term 'net' carbs - and target of 20g! That's like those 2 teeny weeny pieces of bread (yeah I know) I had earlier - so off to look at what net carbs means, because I'm trying to go for 100g carbs as a daily allowance. I'm also looking forward to sharing what I just made for lunch tomorrow, Wednesday and Thursday lunchtimes need not be salad anymore!
