Not too far from the Blue Ridge Mountains,

Found another train town,

Built by those long gone.

Camp Chili

This is a colorful, simple, and nutritious meal, best served hot with warmed and buttered rolls or bread.

Notes: Chop the veggies as big or as small as you would like, taking into consideration cook time and eatability

Kitchen Tools:

Skillet

Spatula

Soup pot

Serving spoon or ladle

Ingredients:

Bacon grease to coat skillet

2-4 Tbsp Butter

2 small onions

2 poblano peppers

2-3 cloves of garlic

2 ears corn, kernels cut off

1 red pepper

1 yellow squash

1 can of chicken, drained

1 package of chili seasoning

2 beef boulliuon cubes

Water (about 2-3 cups)

Method:

- start a small and modest fire

- Place skillet with bacon grease in it over fire (use a grate or rocks to hold it at proper cooking height from fire)

- Chop your onions up, add to skillet

- Chop poblano peppers, garlic, and corn, add to pan after the onions have become a bit translucent

- Cook mixture until lightly done, sprinkle half of the package of chili seasoning over mixture, and about a cup of water. Let simmer for a minute or so

- Place the saucey skillet mixture into your soup pot, set aside

- Add butter to the skillet, and then your yellow squash. Cook until just lightly done

- Add canned chicken, the rest of the chili seasoning, bouillion cubes, and enough water to cover ingredients partway

- Cook until bouillion cubes have started to dissolve, add skillet mixture to soup pot

- Place soup pot back over a low fire/fire embers, until the boullion cubes are dissolved and soup has become one

- While soup is sitting, place your buttered bread or rolls over the fire, until warmed

- Serve, and enjoy!

Momma worked real hard today

Just like she did the day before

She scrubbed all the water buckets

And labored mightily at her chores

Momma picked up all the messes

That these big ol’ horses make

She worked real hard today

But still has nothing in the bank

Momma worked real hard today

Got up before the sun even shone

She walked a half dozen miles in the heat

Only to be told she needs to work some more

Now momma is real tired

But her mind won’t let her sleep

The baby needs new shoes

And her old dog hasn’t had enough to eat

Momma worked until her body ached

Each and every day that passes

But she can’t stop worrying how

She will ever afford new eye glasses

Momma is exhausted now

She is far past her wits end

Spent her entire life toiling

For rich folks out on their bend

Momma wants to give up now

But she doesn’t seem to know how

If only she could find some peace

Somewhere, someday, somehow
