don't know if the mechanics are the same with sourdough, but i worked at a bakery and the way we made bread rise more and faster was we fractioned part of it, added the yeast to it alone and let it rise on its own between 30min-2h before adding it to the rest of the recipe (any longer and it's going to develop the taste, but the puffiness is going to fall into itself, so if you want your bread to rise more don't leave it waiting for too long). it's called a sponge and you can probably prepare a new portion of it to add to your sourdough. i remember it being 1/5 of the total flour of the bread with just as much water. hope this helps in any way!
Oh interesting I’ve never heard of that!!! So you add the yeasted dough to the sourdough and it helps it rise more?
do any of my bread making followers have any advice on getting more rise in sourdough bc my loaves always turn out pretty small with meh crumb and I don’t know what to do to fix it.. like my dough never doubles in size or whatever and idk if it’s bc my apartment is cold or I use too much water or too little water or what 😭 HELPP

the way the collection is handled at my job genuinely brings me to tears sometimes i just hate it its awful i want to leaaaaave i want to leave i cant stand it 4 years of nonstop bullshit its insane . why work in museum collections when you can just argue with a brick wall
