Rachel Berry is so so important to little girls because she teaches us that it is okay to be emotional and dramatic. Rachel is constantly told that her emotional outbursts are over dramatic, and (while they objectively usually are; perks of being a satirical drama i guess) watching a TV show where the same criticisms that you have been told by men your entire life are echoed to a girl who is mocked for being passionate and driven and determined makes you want to root for her that much more. In a world where girls are constantly told that their emotions are silly and out of line, Rachel is a role model who shows girls that they can be emotional.

(and yes the writing of the show sometimes still enforces the misogynistic idea that Rachel's emotions are over the top, but that doesn't take away from what she symbolizes outside of that context. Also she is definitely like, one of the most emotionally intelligent characters, at least internally. You can say what you want about how she is always crying when she sings, but that's just because she knows how to channel her emotions and she usually knows exactly what she is feeling. The same cannot be said about everyone else)

The whole Unique bathroom thing was probably fueled by a lot of unintentional racism too. Especially when you look back at season one of Glee; there is a scene where Kurt gets slushied and then goes into the girls bathroom to clean up and no one has a problem with it. When Unique wants to use the girls bathroom, people perceive her as a threat when she is just minding her own business. They perceive her as more masculine than Kurt because she is black, but she is objectively much more feminine presenting than him.

This would have been an interesting thing for the writers to have touched on, although given past gl-incidents I don't know if I trust them to do it with enough tact.
