Berry nutty cookies to celebrate the new office!
In case you haven’t heard the news over on our Instagram, your BoxGreen squirrels have a new home! One of our dearest friends came over and gave us this housewarming present– cookies she made herself using some of our snacks!
Made with our very own Berry Nut Mix, these lovely buttery cookies were warmly welcomed by all of us, and we finished half the jar before we remembered to take some photos (oops)!
To make for a nice tea-time snack, we paired these cookies with our own homemade Chrysanthemum and Wolfberry tea :)
Here’s the recipe if you wanna make this lil treat at home!
BERRY NUTTY COOKIES
Ingredients:
225g butter, at room temperature (For more buttery flavor, use French Butter)
110g caster sugar
275g plain flour
1 packet BoxGreen Berry Nut Mix
A few drops of vanilla essence
Method:
Preheat the oven to 170ºC.
Cream the butter in a large bowl or in a food mixer until soft and creamy.
Add the sugar in parts, and beat until the mixture is pale and fluffy. After which, add in the vanilla essence.
Sift in the flour and chop the nuts coarsely before adding to the mix.
Using your hands, roll the dough into walnut-sized balls weighing roughly 10g each, and place them slightly apart on a baking tray (no need to grease or line). Flatten them slightly with the back of a damp fork and bake in the oven for 13 minutes, or until they are light golden brown and slightly firm on top.
Carefully transfer the cookies to a wire rack to cool.
