The last couple days have been incredibly difficult but today is a new day and deciding to move forward, in a positive light is exactly what I'm going to do. Mid-Morning Snack...Veggie "Quiche" :) SUPER easy recipe! Feel free to substitute and/or add other veggies of your choice. Ingredients: 12 Egg Whites 2c Kale 1c Peppers (diced) 1/2c Onion (diced) 1c Potatoes (diced) 1/2c Mozzarella Cheese Pinch Sea Salt & Pepper Directions: Preheat oven to 350degrees. Mix all ingredients, besides cheese, in large bowl. Pour mixed ingredients into baking dish, 8x8 is a good size (be sure to grease dish if it's not a non-stick). Bake for about 20mins or until almost fully cooked. Sprinkle cheese over top & continue to bake until cheese has melted and quiche is cooked all the way through. You can check this by sticking a knife down the center & if it comes out clean, you're good to go! Serve & enjoy!

Dreams Do Come True :)

Got great news!!! I have received an offer for a Medical Assistant position at a local hospital here!! I can’t even begin to explain how it feels to finally achieve something I’ve put my heart and soul into.

If you asked me a few years ago, if I thought I’d be going into the medical field, I probably would have laughed in your face. It is something I’ve always wanted to do but thought was unattainable, out of my reach for financial & personal reasons.

In November of 2011, I realized I needed to make some changes career wise and going into the medical field popped back into my head. With the help of my wonderful boyfriend, I decided to check out Pima Medical Institute. I went to meet with the advisor, ended up enrolling that day and haven’t looked back since!

Now here I am, a Certified Medical Assistant about to start my new career with a very reputable hospital/clinic, in the department of my dreams! I am living proof that YOU can achieve anything your heart desires!!

And on another note…I’ve lost 4lbs!! :D
