It is all about respect... I find it hard to throw away food after everything that has gone into its production. Next time you eat something, whether it's an apple or a piece of chicken, think about all the work and resources that were required to get it to your plate. Farmers, nutrients, tractors, trucks, fuel, grocery store workers, plastic packaging, money at each step, and even the death of an animal for your meal. Respect that process and enjoy every bit of the food.
Thank goodness one of our go-to restaurants, Chipotle, has vegetarian options. Lots of beans and spicy tofu "Sofrito". A perfect wholesome meal without any meat to fuel my fire!
Cheers, to our new vegetarian diet. #meatlessmarch
And so it begins...
Well here we are. March 1st. The first day of our attempt at Meatless March. After many years of contemplation and convincing, we have started towards our goal of reducing our meat consumption for the sake of the planet we live on, and the animals on which humans depend. Myself, I have never been able to be convinced to try vegetarianism in the past. I grew up eating a diet which consisted of meat in some form, at least once a day. Jo, on the other hand has tried cutting out red and white meats at various stages throughout life. She tried for years to get me to do the same. Together we were able to significantly reduce our meat consumption over recent years, but felt this wasn’t enough. As biologists/ecologists we understand the implications of everyone eating meat. We decided to do our part and cut it out as much as possible, starting with going “cold turkey” for the month of March (excuse the pun). It was an impulsive decision that we are now committed to and want to see through. So we thought it would be fun to keep a blog of our journey, for all to share. The highs, lows, ideas, recipes we stumble across, how we’re feeling throughout, and how it impacts our day to day life. Follow us and stay tuned!
