Ingredients: 8 ounces spaghetti. 2 tablespoons black peppercorns, freshly ground. 1 cup Pecorino Romano cheese, finely grated. 2 tablespoons unsalted butter. Salt, to taste.
Instructions: Cook spaghetti in salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti. In a large skillet over medium heat, toast the ground black peppercorns until fragrant, about 1-2 minutes. Add the drained spaghetti to the skillet along with the unsalted butter. Toss until the butter is melted and coats the spaghetti. Remove the skillet from heat, then gradually sprinkle the Pecorino Romano cheese over the spaghetti while tossing continuously. Add reserved pasta water as needed to create a creamy sauce. Season with salt to taste, then serve immediately.
