Honestly Ingo is right, even if he went back to looking exactly as he did before it wouldn't actually make Emmet feel better, it'd just make them both feel worse everytime it caused Emmet to slip up. As it is, the changes are a good visual reminder that even if Ingo hadn't lost his memories, they've still been separated for so long (10 years I think you said you hc?) that they'd need to spend time getting to know each other again anyway. Of course it's sad that things can't go back to how they were, of course it hurts that the person he loves most doesn't remember how things used to be and moved on without him, but I think there's joy to be found in rediscovering each other too. And I also think there's something so heady and appealing about knowing that someone loved you so much that not even nearly total amnesia could tear you from their heart and soul.

To sort of play off that, since you said you like Emmet being all possessive and stuff, I think it'd be fun if after he starts getting used to the different hair, posture, etc Emmet starts to associate that look with new feelings of protective and possessiveness. He didn't use to feel those things about Ingo (or at least not much), and even looking at old photos of Ingo he doesn't feel it, but the sight of Ingo as he is now triggers them immediately. Nobody look, nobody touch, he's so greedy for Ingo's time and attention, for confirmation that Ingo never stopped loving him on some level. He wants him all to himself until they've cemented each other back into their lives with new routines and memories, until this Ingo feels just as familiar as the old one did even if in different ways. But also, he wants to protect and provide! This Ingo has lived a hard life full of danger and uncertainty, and his new look is tied to that in many ways. He needs to make sure Ingo is safe and comfortable, both for his own piece of mind and because it'll make Ingo want to stay and be his.
