Let’s Eat Stuffed Peppers!
~ Let’s Eat Stuffed Peppers~
So stuffed peppers have be a staple part of my childhood! even when I grew up eating animal products, this was a classic sunday dinner! i’ve now learned to veganize it & it’s still loaded with unbelievable flavor! below are the steps & ingredients i took to make this dish!
1). Preheat your oven to 430 degrees (F) & spray some non stick cooking spray into a glass pan.
2). Boil your water, stir in rice to boiling water, & let simmer for 5 minutes. (look on side of boxed rice for precise cooking measurements).
3). Wash peppers & cut off tops of peppers & cut out seeds & inner “guts”. Pour some olive oil (½ teaspoon) into the pepper & turn it on its side to cover all areas. season inside with a sprinkle of cayenne pepper & garlic. Set peppers aside.
4). Open 2 cans of black beans & drain them in a strainer.
5). Open 2 cans of white/yellow corn & drain them in a strainer.
6). Grab a large onion & dice finely. if you like more crunch, dice them in larger pieces.
7). Combine cooked rice, onion, black beans, corn & some vegan cheese of your choice into a large mixing bowl. stir until fully combined.
8). Add combined items into stuffed peppers with a spoon until full.
9). Sprinkle vegan cheese on top of peppers.
10). Add the rest of the combined rice into the glass pan along with the stuffed peppers.
11). Cook 20 minutes under tin foil, & then 20 minutes without tin foil.
Let cool for 3 minutes and then serve!
I personally like to add some salsa onto mine to add some more flavor!
You’re also able to add some lettuce & make yourself a chipotle like bowl!
I think this is a great meal & is also great used as left overs! If you like to do meal prep- this is a great recipe to use!
