Meal Prep Sunday
Hello All,
So a lot of you will know that Sunday is typically my Meal Prep Day (if I have the energy to do it). It makes my life so much easier during the week and especially on the limited foods I can eat. Makes me less likely to eat something I shouldn’t ;).
This weekend it was:
Breakfast Burritos for the Hubby. They are so flipped easy and go straight into the freezer so he can grab one out in the morning and stick in the microwave for a quick lunch. I’ll put my recipe below which I found on Pinterest.
1filet of Halibut for my lunch tomorrow which will be a yummy salad full of variety.
Pork Meatballs which I kinda winged it and will include my recipe below too.
Steamed (Boiled) eggs which I will never go back from. It makes the eggs perfect, easy to peel and perfect yolks.
I was going to make millet for a breakfast smoothie but my energy hit a wall. You know how it is being in the kitchen on your feet for too long...the back and feet start killing you!
Here are some recipes I threw together. I am still feeling great and always looking for variety! P.S. I am pretty sure Etta is getting her 2nd molars (or whatever they are called) :(.
Breakfast Burritos:
6-8 Eggs scrambled with some salt and pepper
Package of ground breakfast sausage (your pick). The Hubby likes Jimmy Dean
Shredded Cheese
Flour Tortillas
Hash browns
Super easy and all you do is cook everything that needs to be cooked and begin building the burritos. I use wax paper to separate them and also to roll them up in and just put them all in a bag and stick in the freezer.
Pork Meatballs:
Package of ground pork
Leftover rice & kale mixture (just grabbed some stuff from the fridge)
1 Egg
About 1/2 Ts of some spices (celery salt, lemon pepper, hungarian paprika, basil, parsley)
Combine all and bake @ 350 for about 25 minutes
