HIGH CARB, LOW FAT, VEGAN BROWNIES
Yeah, you heard right. My best friend Amelia and I have been craving brownies like crazy lately! We made a couple batches of vegan junk food brownies before I decided that I needed to make some that were high carb, low fat to fit my 801010 lifestyle while still tasting delicious and after a few batches, I can finally say that I did it!
So if you wanna know how to make these amazing, fudgy brownies that are probably healthy enough for you to have for breakfast, keep reading.
Ingredients-
2 cups oat flour ½ buckwheat flour 2 tbs flax meal 2 tbs chia seeds 1 ½ cups carob powder 1 ½ cups coconut sugar 2 tsp baking powder 2 ripe bananas 1 tsp vanilla extract ¾ cup almond milk
Method-
1. Mix the flax meal and chia seeds with 12 tablespoons of water and leave in the fridge for about 15 minutes to gel. Preheat the oven to 180 degrees Celsius.
2. In a large bowl, mix the oat flour, buckwheat flour, carob, coconut sugar and baking powder.
3. In a blender (or just mash by hand) blend the bananas, vanilla, flax & chia mix and almond milk.
4. With an electric beater, mix the wet ingredient in the blender with the dry ingredients. Mix until well combined and add more almond milk if needed.
5. Pour mix into a non stick brownie pan. As you can see, mine are pretty thick but you can easily pour into a larger, more shallow pan.
6. Bake for about 15-20 minutes or until a fork stuck into the middle comes out mostly clean. It doesn’t have to be spotless, brownies are gooey and soft anyway :)
