It snowed today. Just a dusting but everything looks sort of white and cold. I didn't leave the house until 3:30 PM EST. When the weather gets like this, I find my styling inspiration in the uniform of our 20-something babysitters - sweats or leggings tucked into Uggs with a big cozy sweater. Green Bean Casserole “Latkes” 2 14.05oz cans No Salt Added French Style Green Beans ½ cup French’s Fried Onions ¼ cup + 2T Rokeach Mushroom Soup 1T Manischewitz Potato Starch + ½ cup for dredging Ground Pepper ½ to ¾ cup olive oil Drain green beans and spread them on a kitchen towel, roll up the towel and squeeze out as much liquid as possible. Transfer green beans to a bowl. Mix in fried onions, mushroom soup, potato starch, and ground pepper. Heat 1/4 cup oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking. Place ½ cup potato starch onto a plate Working in batches of 4 latkes, take 2 tablespoons mixture into your hands, form into 3-inch rounds, dredge in potato starch and place into skillet. Reduce heat to moderate and cook until undersides are browned, about 5-7 minutes. Turn latkes over and cook until undersides are browned, about 5 minutes more. Transfer to paper towels to drain. Garnish with crumbled fried onions and serve!

Autumn Sweet Potato-Maple Kugel
Kugel 6 sweet potatoes 1/2 cup maple syrup 1/4 cup paerve margarine, melted (I like Earth's Balance) 1 Tbsp cider vinegar salt pepper Topping 1 cup flour 2 Tbsp brown sugar 1/4 tsp cinnamon 3 Tbsp maple syrup 3 Tbsp paerve margarine, softened 1/2 cup chopped pecans Method Pre-heat oven to 375 degrees. Grease a 13X9X2 inch baking vessel. Peel and grate sweet potatoes. Mix together in a bowl with maple syrup, margarine,cider vinegar, salt, pepper and transfer to the baking vessel; cover; and bake for 40 minutes. While the kugel bakes, mix together flour, brown sugar, cinnamon, maple syrup, margarine, and pecans. Remove kugel from the oven and increase the oven temperature 400 degrees. Crumble the streusel topping over the kugel and bake uncovered for about 30-35 minutes until the topping is golden and the underlying sweet potatoes are tender.
