This is one of my favourites! Super quick and easy to make and easy to swap out the chicken for a vegan option. We made it with cauliflower rice for a healthier option too.
Ingredients for sauce (serves 2/3): 1tsp sunflower oil 1 onion 1inch of fresh ginger root peeled grated 2 garlic clove 1tbsp curry powder 2 tbsp plain flour 500ml chicken stock / vegetable stock 1 tbsp soy sauce 2 tsp honey / sugar 2 chopped carrots
Ingredients for dish (serves 2/3): Breaded chicken / finely cut sweet potato and White rice or cauliflower rice Mixed salad leaves
Recipe for the sauce: 1. Heat oil in a pan and fry onion for 5 minutes until golden. 2. Next add ginger and garlic, cooking for an extra minute. 3. Stir in curry powder and flour, then slowly stir in the stock. 4. Drop in sliced carrots, followed by soy sauce and honey 5. Bring to boil, then simmer for 15 minutes until sauce starts to thicken. 6. Finally blend it all up until smooth.
