Now that the fast is over the rest of this month should be a piece of cake (pun intended). Here are some recipes to get some ideas flowing. Like I said I wouldnāt try to do them all but try a couple to mix up your menu.

Watercress & Chicken Soup
Move over, kale. Here comes a more versatile, nutrient-dense, and tasty leafy green: watercress!Ā
Seriously: did you know that this unassuming aquatic plant was recently proclaimed the new queen of the produce aisle, with a nutrient density score of 100%? My mom, for one, has long been aware of the nutritional punch that watercress delivers, because sheās been makingĀ traditional Cantonese pork sparerib and watercress soup since forever. It wasĀ one of my favorite childhood dishes.
During the month of January, Iām partnering with Whole Foods Market to develop a couple of simple and delicious recipesāso when the Whole Foods team asked me to create a comforting dish using watercress, my momās soup immediately came to mind.Ā Hers is a traditional slow cooked soup, or lou fo tong (čē«ę±¤), packed with tender pork spare ribs, watercress, dried Chinese dates, shiitake mushrooms, and almondsābut patience is not one of my virtues. I was determined to make a fast and easy version.
This Watercress & Chicken Soup is a mod of my momās recipe that can be prepared in just minutes, and without having to make a special trip to an out-of-the-way Asian supermarket. The secret? I substitute sliced chicken thighs for the pork, and leave out items I canāt find in my neighborhood grocery. Also, because the watercress I bought at Whole Foods is so young and delicate, I decided to add it at the end so it remains a vibrant shock of green in the bowl.
I can almost see my mom shaking her head as she reads my recipe, but heyāwhen Iāve served this soup on a chilly weeknight,Ā my brood has given me a collective thumbs-up. After all, thereās nothing more comforting than a steaming bowl of soup, right? So go grab the ingredients and simmer a big pot tonight!

Week 1 Kick off!!
Hey Folks,
Well the time is come to kick off this challenge. Here are some tips to get started. Ā Look out for a link I will send later to a blog where I will post tips and Ā we can encourage each other, share recipes, etc.
Breakfast: Ā For convenience I would stick to a protein smoothie shake. Ā Here are some options for you: Ā http://paleogrubs.com/smoothie-recipes
**Remember to have a balance of allowable carbs, healthy fats, and protein even with this smoothie.**
Lunch: For lunches this week we are going to make 3 days of lunches since we will be fasting from Thursday to Saturday.

Dinner:
Before you break your back trying to cook dinners for everyday of the week. Ā Remember keep it simple most nights. Ā (Jam is great at this). Ā If there is left overs from your lunch prep, flip that for dinner. Ā Have some baked chicken thighs or breasts on deck in the fridge and some vegetables ready to put together for a meals. Every night should not be Top Chef. Ā
Try to do a protein and two vegetable sides (one can be starchy like squash or sweet potato). Here are some pro tips: ⢠Most veggies can be made lots of different ways (cauliflower mash, cauliflower "rice", etc) ⢠The slow cooker is your best friend ⢠The whole 30 allows white potatoes (proceed with caution) ⢠nom nom paleo is a good source of recipes that are hearty and kid friendly
Examples dinners: ⢠Sausage and peppers w/ baby red potatoes ⢠Baked fish with broccoli and green salad ⢠Burger bowls (green salad topped with a burger patty) ⢠Chicken thighs with roasted Brussels sprouts and squash ⢠Spaghetti (sub noodles for zoodles or spaghetti squash)
Snacks Like with everything else here, plan ahead. Ā Portion out and prepackaged your snacks in a small ziplock for the day this will help prevent over-snacking and worse binge snacking.
Example snacks: ⢠nuts (not peanuts) ⢠Seaweed ⢠Sweet baby bells ⢠Single serving of low sugar fruit (1 apple) ⢠Baby carrots ⢠Celery with almond butter ⢠Pickled veggies
