Lime Rickey !
Ingredients:
½ cup sugar
1 ½ cups gin
¾ cup fresh lime juice
1 ½ quarts chilled soda water
Thin slices of lime
How to Make It:
Step 1
In a 1-quart pan, mix sugar with ½ cup water and stir over low heat until sugar is dissolved, about 5 minutes. Let cool or chill.
Step 2
In a 3-quart pitcher, combine gin, lime juice, and the cooled syrup. Cover and freeze until ready to serve.
Step 3
To serve, add soda water. Pour into ice-filled glasses and garnish with lime.

Apple cider, zesty orange, sweet fig preserves, a generous shot of bourbon and a splash of sparkling water

“Yellow Valley,” Hummingbird, 1053 East Whitaker Mill Road, Suite 111, Raleigh,
1½ oz Reposado tequila
1 oz Amontillado sherry
½ oz St. Elder Liqueur
1 barspoon agave nectar
Grapefruit Peel
Stir all ingredients together with ice, pour into chilled coupe. Express oils on top from grapefruit peel. Garnish with Nasturtium or other edible flower.

Butterscotch Old Fashioned
60ml Jameson Irish Whiskey
20ml Butterscotch Sugar Syrup
5ml Maraschino Cherry Juice
4 Shakes of Old Fashioned Bitters
This was a cocktail I made for father’s day at my restaurant. So many dads ordered it! It’s got a strong but sweet whiskey flavor with a delicious spiced buttery finish.

Cinnamon Rosemary Old Fashioned!
Cinnamon Rosemary Simple Syrup:
½ cup honey
½ cup water
6 sprigs rosemary
3 cinnamon sticks
For the cocktail:
4 teaspoons cinnamon rosemary simple syrup
3 dashes angostura bitters
2 ounces bourbon
1 orange peel
rosemary sprig for garnish, optional
INSTRUCTIONS
Start with making the simple syrup. In a small saucepan, combine honey, water, rosemary sprigs, and cinnamon sticks over medium heat. Bring to a simmer, stirring frequently until honey has dissolved into water. Remove from heat and allow to cool completely. Once cool, remove rosemary and cinnamon sticks and transfer to an airtight container.
When ready to make cocktail, add 4 teaspoons of the cinnamon rosemary simple syrup and 3 dashes of bitters to an Old Fashioned glass. Swirl syrup and bitters around in glass. Add bourbon, ice, orange peel, and stir. Store extra simple syrup in airtight container in refrigerator.
Summery Rosé Spritzer Cocktail by Cyd Converse
5 ounces rosé (I prefer dry)
Fresh strawberries, chunked
Fresh mint leaves
2 – 3 lemon slices
Sparkling water or club soda
Instructions
Place 1 – 2 tablespoons of fresh strawberries and 2 – 3 lemon slices in the bottom of an old fashioned glass.
Muddle well until juicy.
Fill glass with ice to the top.
Add rosé, then top with sparkling water or club soda.
Garnish with fresh mint and lemon.

1 ½ oz. (45ml) Spiced Rum 1 ½ oz. (45ml) Coconut Rum 1 ½ oz. (45ml) Melon Liqueur 1 ½ oz. (45ml) Pineapple Juice 1 oz. (30ml) 151 Proof Rum
PREPARATION 1. Fill a rocks glass with ice and pour in spiced rum and coconut rum. 2. Add melon liqueur and pineapple juice. 3. Top with 151 proof rum.
