Because sampling 1930s cuisine was so… enlightening, staff at our @amhistorymuseum decided to try their spatulas at some World War II-era dishes.
They experienced first-hand the effect of wartime rationing at home. With limited ingredients allowed for each household, period cookbooks found creative ways to make familiar, appetizing meals while also minding nutrition concerns.
Gelatin, ever-wiggling gelatin, had not gone out of style since the 1930s and was now being touted as a healthy and affordable way to stretch rationed foods into family dishes. The 1943 cookbook “Knox Wartime Recipes: How to be Easy on Your Ration Book” calls tomato jelly (above) a vitamin-rich treat. (If you say so.)
These baked fish molds and cheese potato puffs (below) used a type of corn flake cereal to make them more filling and include whole grains.
Despite the restrictions, cookbooks kept an upbeat tone and presented rationing as an act of patriotism supporting the war effort.

Having a great time at the GIF-a-thon at the National Archives Innovation Hub! I gave a presentation on how to make GIFs, and we used the resources of the National Archives to try it out!
The first is a simple video-to-gif using an online converter. The video is Curious Alice, a video that you will have to see for yourself. (That’s all I’ll say.)
The next two demonstrate ways to create gifs out of static images. This one is of the Capitol Building. (We heard the Archives are asked about aliens all the time. The truth is out there…)
Finally, we used the @nypl Labs Stereogranimator to bring to life this stereogram, In lower Geyser basin. Yellowstone National Park.
