My No-Stone Pizza Method Here's how I use a baking sheet to make pizza: I roll out the dough on my pastry board into something resembling a rustic circle (the more irregular, the better, for homemade pizza) and slide it onto a rimless baking sheet sprinkled with either cornmeal or flour — whatever I can find. I prick it all over with a fork to prevent giant dough bubbles. Usually, I brush the surface with olive oil and some sea salt to provide a flavorful base. I par-bake the dough for about 3 to 5 minutes in an oven that's been preheating for at least 30 minutes, at 450°F (the hotter, the better) at least. When you can gently slip a metal spatula (the plastic ones don't seem well-suited to this task) underneath all sides of the pizza with relative ease, with no sticking and sagging in the middle, use the spatula to help guide it off the sheet and directly onto the wire oven rack. Close the oven door and set the timer for another 3 to 5 minutes (depending on the temperature and speed of your oven), at which point you should have a fairly crispy par-baked crust that's ready for its toppings. Slide the crust from the rack back to the baking sheet using the spatula, remove from the oven in order to top, and then bake in your usual way. Pizza made this way will have no soggy bottom or saggy middle. Scout's honor. Maybe if I had gone completely gonzo with paraphernalia and purchased a pizza peel, I would have become more enamored of my stone. But as much as I love pizza, I dislike unitaskers even more, and my baking sheet works just fine.

Baby back ribs: Baby backs - so named because they're smaller than spare ribs (no, they don't come from baby pigs) - are cut from the loin section of the pigs rib cage up near the spine. The next time you're eating a bone-in pork chop take a closer look at it - cut off that nice slice of loin meat still attached to the bone and what's left is a baby back rib. Since they're smaller from spare ribs and come from near the pigs back. This is an area in which the muscles do very little work so they're much more tender than spare ribs and can be cooked in less time. The fast way - 1 1/4 to 1 1/2 hours: Grill them - indirectly if at all possible - at medium heat, about 325° F to 350 ° F for 1 1/4 to 1 1/2 hours. You'll know they're done when the meat has shrunk back from the bone about a 1/4 of an inch and it's tender enough to tear apart with your fingers (Careful - give the piece you're testing a moment to cool so you don't burn your fingertips.) The slow way - 3 to 3 1/2 hours: Prepare to grill - indirectly if possible - at a low, steady heat of 225° F Grill the ribs for 2 hours, bone-side down Wrap them in foil and grill, bone-side up, for 30 minutes. Don't be afraid to add an extra special touch here by pouring a cup of apple cider or juice into the foil packet Unwrap them and grill for 30 more minutes bone-side down Finally, add your sauce and move the ribs to the hottest part of the grill and remove when the sugars have caramelized and you have a nice pasty coating with crisp spots - not more than 20 minutes

Filling Ingredients:
4 eggs, separated
½ cup fresh squeezed lemon juice
½ cup water
1 tbsp unflavored gelatin
1 cup sugar, divided
¼ tsp salt
1 tbsp grated lemon peel
Crust Ingredients:
1 ½ cups graham cracker crumbs
6 tbsp butter, melted and cooled
Optional Toppings:
whipped cream
grated nutmeg
Directions:
Preheat the oven to 350 degrees F. Combine the graham cracker crumbs with the melted butter and press them evenly into the bottom and up the sides of a 9-inch pie pan.
Bake the crust for 10 to 12 minutes or until browned. Remove from oven and allow the crust to cool completely.
Meanwhile, in small bowl, beat together the egg yolks, lemon juice and water until just combined. Set aside.
In the top of a double boiler, combine ½ cup of the sugar with the salt and the gelatin. Add the egg yolk mixture and mix until well combined. Cook, over boiling water, stirring constantly until the gelatin has dissolved and the mixture has thickened.
Remove the top pan from the double boiler and stir in the lemon peel.
Fill a large mixing bowl with ice water and place pan containing the topping into the bowl. Be careful that none of the water splashes into the pan. Allow to sit for 20 minutes, or until the mixture is thick enough to create a mound when dropped from a spoon.
While the filling cools, beat the egg whites until soft peaks form. Slowly add the remaining ½ cup of sugar, 2 tablespoons at a time, beating well after each addition.
Once the filling has cooled, gently fold it into the whipped egg whites until just combined. Place the filling into the pie crust and top with nutmeg, if desired. Chill for several hours, or until it has set up enough to slice. Top with whipped cream before serving, if desired.
Tips/Techniques:
You will also need: 9 inch pie pan, mixing bowls, double boiler, hand or stand mixer. Yield: One 9 inch pie, 6-8 servings
